When you are making the corn tortillas use boiling water and let it sit until you can handle it. It will come out like fresh corn masa. When you are making flour tortillas do not use baking powder or baking soda or yeast just use the flour the lard the salt and the water let it sit 10-20 minutes to half an hour. Use hot water that it almost Burns you. The resting before you start rolling them out is the key to a good tortilla.

You don't need a tortilla press. I've made TONS of tortillas using a heavy book (phone book or something like that). You can wrap it in foil if you wanna make sure it's extra clean. So you just take a plastic bag (freezer bag thickness) and cut it open so that there is only one side connected still. Place the little ball of dough between the two pieces of plastic and then put the heavy book on top and press down hard. There you have it, a tortilla press and no extra kit. I've made thousands of tortillas this way. Not cuz I don't have a press, I do, I just lose it a lot.

My Grandmother used to use a Aluminium covered brick or a large can that still had something in it. She had a Tortilla press but she never used it. She said that in her time they didn't have fancy things like that. I think they did, she just prefers to do it the way her mom taught her. Sorry for the long comment. I just get so excited when I see your videos.

My entire adult life I've been Prepared for a disaster, My parents drilled it into our heads growing up. Lived through a couple bad twister's in the Midwest, and Katrina in Gulfport Ms., But with that said, Even with the life long knowledge and experience that I had or thought I had, This Global Pandemic has made us all come to realize just how real and how quick things can go wrong not only locally but world wide, I use to have what I thought would last me 3 to 6 months, Now I have five times that in several locations. Love your channel thanks for sharing your knowledge be blessed!

The pandemic really woke a lot of people up, our mom drilled into our heads the importance of being prepared as children, she went through WW2 and they had a 1-acre garden growing up and her father knew how to forage for mushrooms, berries, could weave his own baskets, make wine, graft trees, etc. It's the way it was done in the old country and the way they did it here, they were blessed they could share their bounty with families whose main breadwinner or sons went to war. I wish I had taken it more seriously when I was her age.

It is amazing what you can store under your sofa, bed, etc. I help myself to the boxes the stores cut down or box lids from reams of paper and put canned goods in them and slide them under the sofa. It is just tall enough for 1 can. Under the bed is another great place to put things. One of my closets has the drywall removed on one side, we put 2X4 between the studs to hold additional canned goods. The closet itself is just storage no clothes.

I used to grow my own spices and herbs then dry them out and store in glass jars. Saved me so much money. In fact, my brother-in-law owned a restaurant and used to buy most of his spices and herbs from me each season, since I had so much of it. I had two acres filled with gardens of veggies, herbs, spices, fruits and other stuff. Like you, I hardly went to the grocery store for months. I also had three freezers filled with beef, pork and chicken from local farmers. I so miss it now that it's only me to cook for.

I've been on Azure Standard website and they have a lot of items I can use. My problem is that they don't deliver to my area in NY. As far as tortillas go, I roll mine out with my rolling pin as thin as I can get it. The key is after you shape them into balls, you have to rest the dough for at least 30 minutes to an hour in the fridge so the masa flour can absorb the liquid before you roll them out just like a pie crust but only smaller and thinner. But it is better to have a tortilla press which makes it a lot easier.

I’d love to see you make mustard. I love spicy brown mustard. If I could make it it would be a total win for me. I’m kind of getting into to make my condiments since finding your channel last year. I have red potatoes growing right now, I can’t wait to harvest them, so exciting. Yesterday my husband went out to look at my garden and he was amazed how much is growing. My sweet corn and beets are growing nicely. I’d like to get into making pasta and bread. Your no knead bread is on my list. I’m just confused as to which kind of yeast I need. I also want to make flour tortillas, I prefer flour over corn. Becky, you have become my bible of life. You are such a prized resource. If no one has told you today…you are exceptional!❤ Tfs. I also have a 1/3 acre vegetable garden.and a 1/4 acre of all kinds of berries and fruit. I am very impressed with your knowledge being so young. Good for you! Just like you we also make almost all products from scratch, mustard, vinegars, barbecue sauce and all salad dressings are the easiest. Not sure if anybody has mentioned it in the comments yet but wanted to point out that the vinegar from your haul is not ACV but apple flavored vinegar, which lacks the nutritional profile that true ACV has. It's basically a distilled white vinegar with artificial flavoring and coloring, for those who would like to steer clear of those ingredients. Thanks for the fun, informational video! Do you mean Coach’s Oats? I buy it at Costco and we love it. The only thing is, Coach’s Oats are steel cut, not rolled. So you may need to adjust cooking times and amount of liquid needed just a bit.

Do you have a video showing how those lids work on your buckets? I'm from Canada and have never heard nor seen them before.

Will you be able to freeze all of your flour? I started freezing mine after microscopic "thrips," is what I call them, began hatching out. Once I opened the lid, I could smell ammonia where they had been eating and excreting. They would crawl up the sides of my plastic containers and move onto the shelves and from flour to meal, and after they were weevils, would get in my boxed pasta.

Hi, what is your opinion on food saver machines versus buckets with Mylar sleeves and oxygen packets. I’m wondering which will be cheaper in the long run. Thanks in advance 😀

I live and work in the farming community...the farming practice you are describing is not a common practice. I'm not saying it never happens, but I have only heard of this happening on sunflowers (the ones for oil and bird seed). Even then it rarely happens, and this is why...a farmer can't make a profit if they do that. Also, that would only shorten the time by a few days if that. That is an expensive way to shave a few day off until harvest. Lastly, the only reason I can think why a farmer might do this is because of crop damage concerns. There is crop insurance...it makes more sense to collect a crop insurance check than to add another expense. Honestly, there isn't a lot of margin in farming...you have to be thrifty and use your noggin' to make a go at it. Maybe it is happening, I'm just not seeing it.

@@alysiaadams3729 All information I have is from reading about large agricultural practices. I don't have any first hand knowledge b/c I don't know any cotton, wheat or corn farmers personally. I'm sure there are many ways it's done depending on the size of the farm and their farming philosophies but to be safe I buy organic when I can on wheat, cotton and corn.

That Stash tea is so good!! I just ran out and need to get more. Question: do you have a lot of fridge space for storing fresh produce? I wish I could shop less often but my quandary is: what about fresh produce and it staying fresh? Also, that is such a great point about insurances and how having “food insurance” is so important!! 👍🏼👍🏼
