Almond Coconut Cake (6 cup bundt pan or 2lb loaf pan)

A lovely soft cake with a light vanilla and almond flavour. Topped with a coconut icing and some toasted coconut as well. This is just so tasty, and is perfect for afternoon tea, or coffee. It fits perfectly in either a 6 cup bundt pan or a 2lb/900g loaf pan.

Hi Geoff, I'll definitely be having a go at making this. I've got a bundt tin actually it's the same type as yours. I made a chocolate chip marble cake in the bundt tin which was gorgeous. But I will definitely have a go. 👍

Hi Geoff, That cake looks so good! Coconut is another favourite of mine. Sometimes I buy sweetened, shredded coconut and snack on it! Lol I was wondering what kind of cake I could make. This is perfect! Thanks for the wonderful recipe! 😋😊

Hi Judith. Thanks very much. I used sweetened shredded coconut and I lightly toasted more than I needed for the cake, so I had some for snacking on later.
