We caught asparagus on sale this week for 58 cents a bundle ! We bought 30 and I did this with them 😊😊😊

A little trick with asparagus. Take each end and bend gently. They will break off in the perfect place to get rid of the woody part. Works everytime without fail. Try it next time. I LOVE asparagus. I don't know why I've never thought to freeze it when I find it on sale! Duh🤦‍♀️

I freeze a lot of vegetables like you do. My vacuum sealer is a life saver.

We had asparagus growing on some creek beds when I was a kid. My parents would go out and pick very large amounts to freeze. This was decades ago and I doubt mom had even heard of a vacuum sealer. Times have certainly changed!

We trim a wee bit of the bottom stem and then peel the tougher part of the stem to expose the tender part underneath. Maybe it works for us because we grow our own?

Bev,Bev you can definitely eat the stands. The idea is though you have to peel them to get the Woody part off. They can be blanched and pureed to make beautiful cream of asparagus soup. But once you've killed them and blanched them they're also great and salads. Also another thing about asparagus to make sure you don't waste the edible ends when you cut the Woody part off you can snap the asparagus ends and they will give way at the Woody part and the other side will still be edible. Do not cut them with a knife, but snap them. Then peel them blanch them and use them as I said before. Yum yum

When I buy asparagus, right away will cut off and toss about 1/4" of dry end then snap the woody part off...these woody stems get blanched for a couple of minutes, pureed, dehydrated, powdered and added to my "greens" jar.

I just bend the asparagus and the woody part break of. Then I boil the woody parts in a frying pan with some salt for about 10 minutes, that way I have I have tasty boiling water for the asparagus that I also cook in the pan with a bit of butter. I serve it with sauce hollandaise and fresh ground pepper. Also good for an entre.

Try grilling some coated with olive oil until a toothpick will just go in, when they're barely tender cooked....lay on a cookie sheet to cool and then vac pack for the freezer. We did 2 kg this way for husband for over the winter. Neither I nor my daughter eat it so it's all for him He got 16 servings out of it.

Last year, the No Frills in Pembroke ordered an extreme amount of asparagus by mistake. They were selling the for less than 30 cents a bundle. I stocked up BIG TIME. Unfortunately I must have not stored them properly because they were really soggy...maybe I over blanched them? Ill try roasting them to see if that helps! Thanks Bev

Love ya Bev but for whatever it's worth, I would have dried them off, as I have found that even the smallest amount of moisture invariably wicks up and the seal is not as good as you think it might be. I double seal most meat just to be sure, otherwise what seems like a tight seal suddenly has air and freezer burn. I really love my vacuum sealer, and I only bought a relatively cheap one. I'm also with the other commenters on snapping, which I only discovered a couple years ago :) It's some fine looking asparagus! Been missing your cooking/preserving vids. Really really enjoy your home economic vids as well! 💕

Hi Bev, does this way keep the asparagus from getting mushy when you thaw it out? I bought a bunch when it was on sale. Washed them, cut the woody ends off, seal a mealed it like you did. When I thawed them out they just turned to mush. Man I was bummed.

Thie trick os NOT the thaw them out..like frozen cor nin the husk...throw it frozen into the oven or drop the frozen bag in boiling water..but do NOT THAW. Hope this helps

How long do they last being Vac packed? Do you need to freeze them after? Ed says definitely make soup with the ends xx

As long as they're properly vacuum-sealed they'll last for at least a year in the freezer or longer

Did you grow the organic asparagus? @OurHalfAcreHomestead. asparagus is truly one of my favorite vegetables but I have never grown it in a garden and also I despise the stuff in the grocery store because I find that half of it is the Woody yucky part and most of it's grown in Peru these days. Are asparagus season here in Florida is in the winter time pretty much

This recipe looks delicious also guess that's been brought to my attention that my abrupt leave from the live chat, but it has been a crappy week I don't know at what point I was or what I was talking about that day but things have been getting better much better there's a lot of things going on at the Menagerie here and I'm trying to even at my age scale-down LOL

@@OurHalfAcreHomestead absolutely see you Sunday I don't know what I typed or what I said but I was also a passenger in someone's car and where I live in the sticks we have really bad service so if our phones died and then we didn't have our chargers and that was the end of that but I have been having one of those weeks I'll explain about it and chat thank you so much for the prayers though because they are much needed anyway it feels so good to know there's people out there that care about me and I care about all of you also thank you Bev, thank you all for the love.

Rather than boil them put them in microwave on high for cpl minutes then ice water. Much easier!
