When I was a little girl, if I was well behaved when I went shopping with my mum, she would let me choose a packet of treats as a reward. Chewy toffee was normally my first choice.
I like cooking toffee at home. The sweet smell from the caramel is incredible. When I look at the caramel bubbles in the pan during cooking, it seems to take me back to my childhood.
記得小時候跟媽媽去賣場,如果我表現良好,媽媽就會讓我挑一包喜歡的零食當獎勵,甜甜蜜蜜,奶香十足的太妃糖常常是我的首選,現在長大了,對太妃糖的喜愛仍不減。
熬煮太妃糖時,聞著焦糖散發出來的迷人香氣,看著鍋內翻騰的焦糖泡泡,小時候嘟著嘴咀嚼太妃糖時的幸福滋味油然而生。
Ingredients 食材:
Whipping cream 鮮奶油(乳脂含量35%以上)300ml
Unsalted butter 無鹽奶油 125g
Granulated sugar 白糖 300g
Salt 1tsp 鹽 1茶匙
Vanilla paste 1tsp 香草醬 1茶匙
Salt flakes (optional) 鹽之花(依個人喜好)
Cook the caramel until 125C (257F)
焦糖烹煮溫度攝氏125度(華氏257度)
