✔️ CLASSIC CHAJÁ CAKE
This is my version of a classic Uruguayan dessert.

INGREDIENTS
CLASSIC GENOISE OR VANILLA CAKE
▫️6 eggs
▫️180g of sugar
▫️vanilla extract
▫️180 g of flour 0000 / all purpose / loose ▫️1 pinch of salt
MOLD 24 cm in diameter.
BASIC SYRUP
▫️150g of sugar
▫️150 ml of water
FILLING
▫️400 g of pastry dulce de leche
CHANTILLY CREAM (for the 2nd filling)
▫️200 g of whipping cream
▫️5 tablespoons of sugar
▫️vanilla
▫️ 1 tsp unflavored gelatin (equivalent to 3 g)
▫️ 5 teaspoons of water to hydrate the gelatin (equivalent to 15 ml)
▫️ 2 large fresh peaches for the filling.
CHANTILLY CREAM (for coverage)
▫️500 g of whipping cream
▫️10 tablespoons of sugar
▫️vanilla
▫️ 2 tsp unflavored gelatin (equivalent to 6 g)
▫️ 10 teaspoons of water to hydrate the gelatin (equivalent to 25 ml)
▫️Fresh peaches cut into cubes to decorate
▫️Organic and edible natural flowers
