PUb Med Study Results: The glycaemic response to nine types of rice (white basmati, brown basmati, white and brown basmati, easy-cook basmati, basmati and wild rice, long-grain rice, easy-cook long-grain rice, Thai red rice, Thai glutinous rice) and two types of rice vermicelli (Guilin rice vermicelli, Jiangxi rice vermicelli) commercially available in the United Kingdom were compared against a glucose standard in a non-blind, randomized, repeated-measure, crossover design trial. Fourteen healthy subjects (six males, eight females), mean age 38 (standard deviation 16) years and mean body mass index 21.3 (standard deviation 2.3) kg/m(2), were recruited for the study. Subjects were served portions of the test foods and a standard food (glucose), on separate occasions, each containing 50 g available carbohydrates. Capillary blood glucose was measured from finger-prick samples in fasted subjects (-5 and 0 min) and at 15, 30, 45, 60, 90 and 120 min after the consumption of each test food. For each type of food, its glycaemic index (GI) was calculated geometrically by expressing the incremental area under the blood glucose curve as a percentage of each subject's average incremental area under the blood glucose curve for the standard food. The 10 foods exhibited a range of GI values from 37 to 92. The study indicated that rice noodles, long-grain rice, easy-cook long-grain rice and white basmati rice were low-GI foods, whilst all of the other foods were medium-GI and high-GI foods. The information presented in this paper may be useful in helping people select low-GI foods from the customary foods consumed by the British and Asian populations.

I agree with you about educating us. It is good to know Browm Basmati has a low or medium index. I don't have Diabetes and want to keep it this way! I embrace receiving the education you share with us! Thank you very much!!! 💕🙏🏽

I for one very much appreciate you going into detailed explanations. I remember things better when I understand them. It also makes it easier for me to judge the accuracy and trustworthiness of the information you are providing. There are a lot of people out there claiming to have “the” solution for heath and diet. Some claim to be doctors, some probably are. Many disagree with one another, and many are selling something. So many are not trustworthy. Many of the trustworthy ones aren’t good teachers. After just two videos, I find you to be both trustworthy, and an excellent teacher. It a world often filled with bad health advice I appreciate your approach. Thank you.

Thank you for your kind encouraging words. I do not often read the comments on my KZfaq channel, because there are often many unkind, unreasonable, hate and even rascist comments which can be v discouraging to read, especially after putting so much time, effort and heart into making the videos. In India rice is not eaten alone. It is eaten in combination with some other low GI food like Lentil , Sambhar ,Vegitable meat and meat curry , Fish and fish curry curry , and so on. As per my understanding , We do not eat rice in isolation and when we pair rice with any other low GI food , the combined GI will be lower than the rice chosen to eat. Please give your valuable comments suggestions .

I think most people around the globe combine rice with something else. When you eat other food that is low GI they are competing with the high GI food which lowers the insulin spike.

Ironically, India has the highest diabetes rates on the entire planet earth. So obviously not all Indians are eating low GI foods.

I was curious about what you said, so I looked it up, and apparently it's epigenetic deformity from British colonialism. 😮 Due to famines and food control, Indians who stored more glycogen and fat survived longer, passing on these epigenetics to their descendants. Back then, it was a virtue, but in a modern day setting where food is abundant, it's a deadly trait to have.

Unless you only consumed rice in your meal, then GI is a vital indicator to strictly follow for a glycemic sensitive person. 🙂

One method of lowering the glycemic index of rice is to allow it to cool after cooking. This increases the amount of resistant starch which has been shown to reduce the glycemic index, even if the rice is subsequently reheated after cooling.

Yes, lower cooling starches, including rice, is one way of lowering the GI of such starchy foods, but I have always been more careful in advocating or teaching that, because many people are not so careful in managing the food hygiene aspects of this, that they cool and keep the hot cooked rices in room temperature for too long before storing in fridge. So every time anyone advocates that, it is important to accompany it with the necessary reminder on food hygiene. Cheers, Dr Chan

I've been having this dilemma. I'm asian and have high blood sugar. It's very difficult for me to find a way to eat Asian food without rice. I've tried cauliflower rice and it's not the same. 😔

Same. I think if you eat less rice and add in more salad with the meal like finely grated carrot salad with cucumbers, it might help. I don't know what Asian you are, but I'm Indian and I am used to eating the carb like rice or roti as the biggest part of the meal with a curry or spiced fried food on the side. I am now eating a low carb diet so I haven't been eating rice or bread. The salad seems to help. But I will be eating rice and bread in the future once I lose weight so I will be adding salad eaten at the same time with the rice dish so I feel like I still ate my rice but without eating so much of it.

I wish the difference of brown vs white basmati rice was discussed. I believe most people that are concerned about the glycemic index wil eat the brown version.

I have never been able to find the GI of parboiled basmati rice anywhere online. The International Glycemic Index website does not provide this information either. I'm hoping it is a low GI grain because that is the type of rice that I have been eating for a long time now.

It would help to just give the GI of brown/red basmati rice and the GI of white basmati rice. I can find the GI of brown, but not white. I looked at GI databases but they don't indicate brown or white, just basmati.

If I convert ordinary cooked white rice into resistant starch by cooling the rice in the refrigerator for a day, would the day-old rice be healthier and lower in calories?

Every change in the processing/cooking process of rice, whether it is duration of cooking, temperature at which it is eaten, parboiling etc, can change the different characteristics of rice - from GI, Resistant Starch amount, arsenic/phytates level etc. But whether the resulting rice is 'healthier' or not would depend on what one is comparing it with. In any case, the topic of this video is simply to talk about the GI of different types of rice. Thanks for the comment. Cheers.

For anyone trying to follow a Keto diet ALL rice is either a NO or Very limited--as in 1/4 cup or less of cooked rice. Otherwise it will kick you out of Ketosis. As a Type 2 diabetic I can tell you that rice of any kind will spike my blood sugars as monitored by CGM. The only "rice" that I have found that doesn't is wild rice. Hope this helps

GI varies from person to person and from day to day. To also depends on the person’s state of health ie. insulin resistant or not IR. So NO LABEL CAN SAY how your body will respond

Hey Hannah, thanks for your suggestion. Although I am a lot more comfortable with English than Chinese, I've been conducting Lifestyle Change programmes in Chinese as well because I wanted to engage the Chinese speaking community, so as to correct misconceptions about diet and health that are more common and peculiar to Chinese culture and the Chinese speaking. I've been thinking about starting a separate new Chinese language channel but that's a huge undertaking! But I shall get to it at some point in the future when I have more time. I dont think anything above 40 is actually low GI rice in the 50s in contrast to asparagus with a GI of 31 the lowest GI rice is almost double that of asparagus. I tend to try to limit anything above 50.

I have a special request that you might have covered already, but if not… I was recent diagnosed with high liver enzymes and want to learn as much as I can about liver safe foods. You didnt separate white from brown Basmati. ANY brown rice is going to be lower GI than the white of the same type rice, because it takes the body longer to break down the brown rice, with all its nutrients and superior fiber than the white, which is just starch. People think white rice is just a different color, but it is brown rice that has had all nutients and fiber removed from it. No rice grows white out of the ground, any more than there is brown wheat and white wheat. These are human products. All those cereals you find in super markets were once whole grain, which was REFINED (had all nutrients removed), then had a couple of vitamins added and is sold as "fortified". All those "cereals" are basically garbage, with tons of sugar added . Same goes for rice.

I am ethnically Chinese, I am a Singaporean. I speak English at work, at home, in church and almost 90% of the time, whilst the other 10% of the time, I speak Mandarin, Cantonese, Hokkien or Teochew, usually to those elderly folks who do not speak English. Singapore is a multi-racial country and an international city with more than a million foreigners living and working in Singapore, and I interact with people from all races everyday in English, so guess that's all the different 'ingredients' that into making 'my accent' 😄
