Easy Chicken Adobo and Cabbage Tsukemono "koko," Grandma's Plantation Style Cooking, Local Family

Hope you had a wonderful thanksgiving with your family! Please enjoy this simple chicken adobo and tsukemoto recipes from my grandma's collection of recipes! Chicken Adobo Recipe:
3 lbs. chicken thigh, defrosted
3 cloves garlic, crushed
1/2 C. Vinegar
1/4 Tsp. Salt
1/2 Tsp. Peppercorn, crushed
1/4 C. Shoyu
1 bay leaf
In a large pot, combine all ingredients then add in chicken. Cover and let it marinate for 2 hours. Bring to a boil then lower heat and simmer for 30 minutes. Uncover and simmer until liquid evaporates (about 15 minutes) or until chicken is lightly browned.
Koko Recipe:
3/4 C. Sugar
1/4 C. Vinegar
2 T. Hawaiian Salt
Cabbage ( 1 head)
Gallon size ziplock bag.
Cut cabbage into 1 inch pieces. Mix together the sugar, vinegar, and Hawaiian salt. Mix until the sugar and salt are somewhat dissolved. In a big bowl, mix sauce into the cabbage until some of the water is released. Put the cabbage and the sauces into the gallon sized bag and mix. Chill in the refrigerator for 2-3 hours before eating.

This the way we make cabbage tsukemono. We cut the cabbage much smaller. Very yummy. Grandma’s make the best dishes❤

LOL You can put the pot of chicken in the fridge for 2 hours if you feel funny leaving it out to marinate. Looks so delicious! Thanks for sharing❤

haha I wasn't sure about it at first. But then I read online that if it has vinegar and salt, it will lengthen the life of the chicken.

I wish I had written down my grandma's tsukemono, nishime and sushi recipe. We got to eat it once a year when we all gathered at new years. Miss those days. Thank you for sharing your beautiful family and the good food you make. Looking forward to the next video.

Thank you Cari for sharing your family recipes… I’m from Hawaii raised on Kauai and Oahu now living on the Gulf Coast of Mississippi. I don’t know if they sell the Honpa Hongwanji (Pali Hwy) Cook books anymore but there are I believe 5 volumes that have all the old Japanese recipes I grew up cooking with my Japanese grandma ❤ Please keep sharing great Hawai’i family recipes. I've never tried making tsukemono with sugar and vinegar. My usual recipe is just salt. Going to try this one!

Hiiii Cari and family! Reid…..’Chicken Adobe Photoshop.’ 😂 I love chicken adobo. I think I want to make it for dinner tonight. Thank you for sharing! 🥰 The koko looked so good too! I remember my mom making tsukemono like that. She had a big bucket and a giant rock to put onto a plate, to squeeze out the water. What a great way for your family to get together and recycle leftovers…..nothing went to waste. Little Ellie is growing so quickly. She’s absolutely adorable! Christmas at your house is going to be amazing! I miss our son at that age. He’s up in Oregon and will be making Osechi Ryori for all of his friends this upcoming New Year holiday. Yumm! Your chicken adobo looks tasty 😋 your pickle cabbage looks yummy too! When you make chicken adobo again use chicken thighs with bone I made one time and I used boneless it was kinda dry! Love watching your vlogs!! Happy Hoildays!

(This koko is ono, Cari ... and your gma did a video w/you and your cousin using the same recipe, "Miso Soup and Koko." I prefer the koko unrinsed.) 😘

Everything Looks delicious, adobo is always good with garlic rice, a cheat way if you don’t want to make your own fried garlic, just sprinkle the bottle fried garlic over your rice as if its furikake, just as delicious, and quick🤙🏽

Leaving it out for couple hrs should be fine because of the vinegar I know some people add a teaspoon of vinegar to their rice when they are going to cook it And they swear by this method. Supposed to last like a week in the rice pot. I haven’t tried it but they swear by this method Thumbs up

Hi Cari, Thanks for the vlog! I haven't had adobo for a long time. Sounds like it's about time to make some. I'm going to be meeting up with some friends for a potluck one of them mentioned making pork adobo. So maybe I'll wait for that before making my own. But everything looked great!

Never question grandma, lol…jk Once you add anything like salt or vinegar to chicken… you should be fine leaving it out for two hours👍
