Q: Do I better to double fry it?
A: If you want to, yes you can. But I found that single frying was good enough.
If you make thick chips like steak house fries, you probably have to double fry it.
But thin ones like this aren't necessary doing it.
Q: Can I freeze it before frying?
A: Not recommended. Because you will see lot of moisture once it's frozen. That makes the chips soggy. That case, you might have to double fry it to remove moisture before frying at high temperature

In Japanese cuisine, there's a word "Less is more". It means if you maximise the goodness of the ingredients, there's not many things needed. This dish is just like that!! By the way, both air fry and deep fry taste almost equally good!! To be honest, there's not much difference between those except the looks!
