Miss Brenda you take the extra tìme needed to make a dish like this and i did the same thing in my younger day's. I hurt my back working as a house keeper in a retirement home moving heavy futurniture and setting up long tables for my employer to have their monthly meetings. I still look back to when.i cooked for our pastor and his family . My husbsnd marvin and I made home made pizzas for his patients in the nursing home. I cooked most of the food on Thanksgiving and Christmas dinner because my mother lost her leg due to her diabetic condition. My mother and sisters are deceased now and only me and my one brother left. Ive had a happy life. God has been good to me. Blessings from our lord and saviour and his abiding love im sending to you miss BRENDA. ❤️

I make it but with bread crumbs I really wish I knew this way because my son and I are overweight and trying to eat healthier and from now on I’m gonna make it this way ! Thank you so much for showing me how to cook healthy but thank you for making me happy again with your great spirit and personality I needed you in my life through your videos and books. Yum! Eggplant 🍆 Parmesan is delicious 😋 I salt my eggplant before getting excess moisture out. I also use fresh parmesan. I coat the eggplant in flour. Yours looks delicious 😊

Always buy your chunk if cheese and have it ground at the deli counter. There really additives in your ready cheese to prevent it from sticking together.

I usually use Italian bread crumbs when I make it first I dip it in whole eggs. I will definitely try your way lower in calories and must be yummy With the grated cheese instead of bread crumbs. Definitely put the muz on top

A Christian God Sister made some ' Egg Plant Casserole 🥘 ' some years back, I had seen the Egg Plant in the produce section of the Grocery Store but had no idea how it tasted. Well when she made it and gave me some, I wasn't sure if I would like it. But it was so good! I know that the one you cooked is going to be a knockout!!!
