Fried Green Tomatoes
green tomatoes
eggs (about one per tomato)
flour
salt
oil
Slice tomatoes and dip in beaten eggs. Dredge in flour and be sure to coat both sides of the tomato slice well. Fry in hot oil over medium heat until golden brown on each side. Salt well throughout the frying process. Drain on a paper towel to absorb excess oil.
Best eaten while hot!
