120 degrees then rest for 20 minutes. right at top of med rare.

If you pull the roast from oven @ 130-135 it will be cooked WAY past med-rare after resting for 20-30 minutes, you have to pull it no higher than 115,

Its called a RIB ROAST not a ribeye roast.
