Phil and Johnny were on fire this entire episode. Can’t believe this was all the way back in the E series, remember watching this when it was first broadcast. Speaking of Spaghetti, been learning how to cook different dishes properly over the last few years. Best way to learn is from a world class pasta master called Luciano Monosilio, who takes you behind the science of various techniques and dishes like Aglio e Olio and Cacio è Pepe. It’s absolutely fascinating if you’re into science, chemistry and artisan food.

Jimmy was right! From wiki: "[Butyric acid} is found in animal fat and plant oils, bovine milk, breast milk, butter, parmesan cheese, body odor, vomit and as a product of anaerobic fermentation (including in the colon)." Blindfold people and hold some Parmesan up to their noses. First reaction: "Ew, gross! What is that?" Reply "Parmesan cheese". Next reaction: "Oh, I LOVE Parmesan cheese!"

Butyric acid is also what some American chocolate makers e.g. Hersheys add to their products that give them a distinctive pukey taste, much to the hilarity of the rest of the world (a topic that has been raised on QI several times over the years)

We're talking about mid 1700s onwards, and those spaghetti were "in bianco" - without tomatoes in the sauce.

As I understand it, traditional italian cooking would _never_ put fairly thick sauce like bolognese with spaghetti.

They don't. "Spaghetti bolognaise" is not an Italian dish. It's still lovely though, the Italians aren't the only ones who can come up with great pasta based dishes.
