Yes--on PBS back in the 1970s and 80s. The shows starring Julia Child and the Galloping Gourmet (Graham Kerr) began a bit before him. His father was the state Agriculture and Forestry Commissioner in Louisiana from 1916-1948, and served in the Louisiana House of Representatives.

Kent Rollins was a buddy of Justin and carries out a lot of his traditions, but on a chuckwagon and outdoor cooking. Give him a look-see and let him know I sent you. Him, his wife, and his pups are great people and critters. Justin was the first for me with his devilled eggs and I still make them exactly the way he did even though I can't find the video anywhere.

●Macaroni Salad● 1 lb cooked elbow macaroni 1 cup chopped onion 2 cups chopped dill pickle 1 cup green onion 1 cup chopped celery 1 cup finely chopped parsley leaves & stems 1 cup pimento stuffed olives, sliced 1/2 cup chopped green bell pepper 1 cup freshly grated cheddar cheese 2 cups chopped hardboiled eggs ●Salad Dressing● 1 cup mayonnaise 1/4 cup Creole mustard 2 tbsp good olive oil 2 tbsp fresh lemon juice 1-2 tsp Louisiana hot sauce Salt, to taste

I used to enjoy watching him when he was on PBS. I love that Justin is using a huge bowl to combine his ingredients. I don’t get why so many chefs/cooks try to mix things up in a bowl that the ingredients barely fit into. I guess it’s a pet peeve of mine. I don’t have a bowl as large as Justin’s, but I keep my old enameled roaster around just to toss ingredients together. I never roast in it anymore, but it’s my go to for things like this macaroni salad. I put the finished salad into smaller containers or serving bowls once it’s done.

Agree 100%! When I find a very, very large bowl, I grab it up, only because I too do not wish to have all of my ingredients barely move because the bowl it too small.

He wasn’t a real Cajun. While Wilson presented himself as Cajun in his act, it is unclear if he had any actual Acadian or French ancestry. His father Harry Wilson was of Welsh descent. Justin Wilson described his mother, the former Olivet Mintern Toadvin (1880-1976), as Cajun, but she has no known ancestors who either were Acadian, lived in the Cajun regions of Louisiana, or emigrated from France. (She did, however, teach Justin how to cook.) Her surname Toadvin derives from a native of Guernsey who immigrated to Maryland circa 1675. The Florida Parishes, where the family lived, were not part of the French or Spanish colonies of Louisiana.

My husband, who has passed on, and I, used to watch Justin faithfully. We were thrilled to go to a cookbook signing at our local Sam’s Club some years ago. Such a wonderful gentleman. If Justin is boiling a pot of crawfish up there in heaven, my husband will be first in line, I guar-oooon-tee ya!!

Justin was a great cook. My dad had him in for a fundraiser and he did the show but also cooked for us and some friends. This was years and years ago. He was very nice and his cooking was absolutely delicious "I gar-on-tee!".

My son was three years old when we discovered Justin Wilson and he could never get enough of this man and his jokes and conversation as he cooked. We were stationed in Germany at the time and only one station to watch. This year I sent him a Justin Wilson cookbook for his 38th birthday 🎈🎂 memories ❤

Justin reminds me so much of my father. My father was from Louisiana . He was a Cajun Italian. Whenever he was in a silly mood he would say things like " don't dat putty" instead of " isn't that pretty" I used to think he was the only one who talked that way. Like he was making it up or something. Then I saw Justin on his t. v. cooking show. I couldn't believe how he sounded just like my dad. I miss my dad so much. He passed in 1998 Forever the best father in the world. 😢😊

Add some shrimp and some lump crab meat up in this macaroni salad and you will love it. let it sit in the refrigerator over night so the flavors can merge together. Great show as always.

Wow, does this make me so nostalgic. I'm 49 and remember watching Mr. Wilson with my parents every weekend. Oh, and all that gorgeous Magnalite cookware! My mom bought me a full set of it back when I moved into my first apartment. Almost 30 years later, I'm still using it daily.

Want to elevate your pasta salad and potato salad to supertonic taste? For pasta , combine 1 T oil, 1 T sugar and 1T mild vinegar (unseasoned rice wine vinegar) and pour it over the hot pasta, stir. Do the same for hot potatoes (probably use a bit more but be careful, a little goes a long way. Then when pasta is cool, add the rest of your ingredients. You'll not believe the deeply delicious flavor that comes. Make sure it's hot when you add it.

I used to love watching Justin Wilson on PBS station, long before the Food Network Station cooks. I remember I also watched Marcia Adams, who cooked Amish food, Martin Yan from Yan Can Cook and Chef Jacque Pepin. Must try his recipes, I guaaaruntee ( lol!) I will love them!

@@lilliankrajenka8713 I live in England now ( originally from Maryland), and there’s a tv chef over here called Rick Stein and he did a television series two years ago and travelled from San Francisco down and through Mexico. Anyway, he met up with Martin Yan, looked the same but aged a little bit. Still has the same sweet smile and said the same old corny jokes.

Think I saw him once decades ago, but I learned to cook artichokes because of him. As for the salad, I don't know why people don't just put a bunch of the noodle mix in the bowl with the dressing. It helps clean the dressing off the sides of the bowl when you dump it back into the main bowl.

I met him in my late 20's and he was signing his Cookbook back in the 1970's. He was a kind Southern Gentlemen, could be, my goodness!! Just as he was on his Show. Justin Wilson is a national treasure: I learned from him the importance of cooking with wine you can (and should) drink, and the importance of precise measurements after drinking that wine.

My grandma and I would watch him on PBS. I really miss our bonding together over this show. I love her and I hope they are both chatting it up in the afterlife and making some good food for all of heaven to marvel at!

Stepdaughter would not share her recipe for chicken corn chowder. I went online and found one. Made it. Turned out as good or better. Now she's mad at me.

So glad this showed up. My grandfather and I used to watch Mr Wilson together. Grandpa made some of his recipes too. This made my heart smile ❤

Enjoyed conversations with him twice. Very friendly and honest man. Honest as in , when he said something he meant it.

Justin was super 😊 before cooking show hosts became "big celebrities " He seemed to really enjoy what he was doing!

A gentleman and fine chef de cuisine of what was comfort food in a very Southern tradition. All you need is a shot of bourbon after dinner with your evening sitting on the back porch to count shooting stars...I miss our country when it was civil, friendly and kind! May his soul rest in the peace of Heaven, where we all hope to go.
