Learn how to make Kniepertjes and Nieuwjaarsrolletjes. These waffle cookies originated in the North-East region of The Netherlands, where families hand down recipes from generation to generation. They are deliciously crispy, with a beautiful symbolism behind them. The waffles represent the story of the year. So, at the end of the year, you'll eat Kniepertjes. These are flat because you have unrolled the scroll and read that year's story in its entirety. Then, on January 1st, you'll eat Nieuwjaarsrolletjes. These cookies are rolled up to represent that the story for the year to come has yet to be written! How adorable!
I didn't grow up with these cookies. When I was in the Naval Academy, one of my classmates introduced me to them! I loved them! Not just because they are delicious, but also because I loved what they stood for! Every year we get to write a new story for the new year!

🇨🇦 I made some Niewjaarrolletjes this morning. They are delicious and actually quite easy. I was multitasking and didn’t roll up two of them quick enough so I also had two Kniepertjes 😂

Oh my gosh! I've never seen anyone else make these!! Our family roles the kniepertjes into a log, then chill, then cut them into coins. They usually end up round, maybe it's the coin shape?

How do you store these to keep them crispy? Mine always get chewy! Also, the recipe on the website says UNSALTED butter, the video does not. Thanks for this great recipe. My mom made these every year when I was growing up and I never paid attention. Now that she is gone, I can carry on the tradition! Happy New Year!

The kniepertjes stay crispy in an airtight container (not in the fridge). The nieuwjaarsrolletjes, as long as they are not filled with cream, also stay good in an airtight container; once filled, though, they should be eaten, because if you store them in the fridge, they will lose their crunch.

Maybe you do hot water and room temp butter so you make an emulsion with the butter and the butter doesn't break and get greasy. It's a classical technique in French cooking called beurre monté

@@ToinesKitchen By the way, I found your channel looking for a recipe for banket. I live in a town in Washington that loves their Dutch history and they found it hard to believe I was half Dutch. I think I confused them because I am brown? I was trying to remember what the almond pastry was that I would get at my grand parents when I was a kid. I kept saying it was from the Netherlands and that made them even more confused because they thought the Dutch were from Holland. 🤦🏻‍♀️ I'm also half Filipino, so that's the cuisine that ruled my childhood home. It's nice to see videos of foods I thought we dreams it or something I made up from visiting my dad's side of the family. Thank you so much for sharing your knowledge and recipes!

No, I use the Palmer ( amzn.to/3BpcnLM ) for stroopwafels. A waffle cone iron ends up being just a tad too thin to slice the waffle into two layers. However, with some experimenting, you can make it work. Merry Christmas, and a Happy New Year!

Nee, ik gebruik nu een Palmer ( amzn.to/3BpcnLM ) voor stroopwafels. Maar, vroeger gebruikte ik wel zoiets als deze. Maar, daar moet je een beetje mee experimenteren, want als je hem helemaal dicht doet, wordt het wafeltje te dun om nog in twee laagjes gesneden te worden.

This is a Chef’s Choice 838 - I think they’re out of stock everywhere, though. Any waffle cone iron should do the trick.
