Zosui is a comforting Japanese rice soup cooked in a savory dashi broth with vegetables, eggs, mushrooms, and sometimes meat or seafood. It’s a nourishing meal that helps refuel your energy. With pantry ready ingredients, you can easily make it in no time!

INGREDIENTS (Please check the website for detailed info)
*For Broth
3 cups dashi (I use 3 cups water + 1 dashi packet)
2 tsp soy sauce (I used Usukuchi (Light Color Soy Sauce))
½ tsp kosher/sea salt (use half for table salt)
*For Zosui
6 oz boneless skinless chicken thighs (170 g, 6 oz)
1 inch carrot (40 g, 1.4 oz)
2 shiitake mushrooms (80 g, 2.8 oz)
2 green onions/scallions
1 ½ rice bowls cooked Japanese short-grain rice (200 g, 7 oz)
1 large egg
½ tsp toasted white sesame seeds

That's right! Our family is usually go for udon (as we eat nabe with rice) to end the meal. No waste of delicious hot pot broth.

We went to a 'nabe' restaurant in Hawaii. At the end of the meal, the wait staff added more dashi and prepared Zosui for us.

Thank you for your kind words and for reading my blog! :) Before filming, I move everything to the right side of the kitchen (where you can't see). My kitchen becomes "the set". In general, I keep my kitchen minimal and clean (I like to hide things in the pantry and cabinets), but with the kids around, things won't stay the same for a long time. ;)

ああ、やっぱり今日のごはんはこれです。I'm trying to say, "Ahh, so today's meal will be this." Is it "correct" to use dashi made with mushroom, kombu, and bonito? I don't have dashi packets. Thanks, it looks good! Hope mine turns out good. I appreciate that you show us so many "home" recipes. You care about real food and cuisine, instead of trying to be cool and flashy.

気に入ってもらえるとうれしいです。You said correctly. :) If you're not vegan/vegetarian, I would use kombu and katsuobushi (Awase Dashi), and skip shiitake mushrooms, which tend to have stronger flavor (may overpower). That looks to be a delicious breakfast or lunch soup. A kombu dashi for breakfast, bonito for lunch. Perhaps some tofu, and bean sprouts for a bit of vitamin and protein kick as well?

Oh this has me drooling, no fair! XD But oh I am so envious of that donabe! It looks so good! I have a question about it though, and the kamadosan. They look amazing and I'd love one of each, but I'm wondering if you need a gas-stove to use them? Where I live we primarily use electrical ovens and am not entirely sure if they are suited for that.

I love kamadosan (and use it all the time as kids prefer rice made in kamadosan than rice cooker). Unfortunately, it requires gas stove. For regular donabe, we usually bring the pot to the table to cook, so either way, I recommend a portable gas propane cooktop like this (amzn.to/2lV73un) with butane fuel (amzn.to/2mc7mDy). We use it all the time to make hot pot, or reheat this Zosui at the table etc. And you can make rice in Kamadosan with this, too. Hope this helps!

I used dried shiitake mushrooms, it's as nice as fresh ones. I didn't have eggs (xD sorry) I put cherry tomatoes instead ! I also add a little fresh lemon. (not needed if you add tomato) It's a nice recipe, perfect for cold times. ^^ Thank you

そうなの、このオーガニックの椎茸肉厚でした(でも日本の椎茸程味は濃くないのですが)。雑炊の時はご飯を洗います。おじやは洗わず。違いをブログで書いておきました。

母と一緒にこの料理をつくりました。 But it seems to be for 4 servings. For the dashi, 3 cups is 700ml right? We had more mushrooms (4~5) and 1 big oignon instead of scallion and perhaps too much meat. Maybe this made the plate too big :p but in the case of correct quantities there would be more soup (dashi broth), is it the expected plate? I used 2 tsp dashi powder + 700ml is it a correct equivalent of your dashi pocket? Thanks a lot for your recipe :)

Thank you for the video! If we have to substitute dashi (I am allergic to all fish and seafood products), what is a good substitute that I can find in a common grocery store?

Hi Regina! If you want to make this dish "Japanese", the only way to make it taste authentic is dashi. If it's chicken broth... I'd say it's more Chinese style? If you're not particular, then you can use other broth. If you're allergic to fish/seafood, I recommend using Kombu Dashi, which is no fish/seafood. Many vegans use Kombu Dashi or the combination of Kombu and dried shiitake dashi. More about dashi here: www.justonecookbook.com/how-to-make-dashi-jiru/

I love Kayanoya (amazon or their website or Japanese grocery store). It’s a bit more expensive than other brands but it’s cheaper than chicken broth if you count $ per packet. Yamaki is next one... I listed on my shop page on the blog too. 🧡

Just tried it, had to use regular old chicken stock, but very good recipe, nice discovery..! I need to find dashi. Silly question but, is there a reason for the rinsing of that type of rice? I didn’t rinse it, used a freshly cooked batch. Thanks

At 3:04 you rinse the cooked rice. Is that just to break up the clumps? Or does it remove excess starch?

Remove excess starch. For Zosui, we rinse rice. For (similar) Ojiya, we don't rinse rice. I mentioned in the blog post. :)

You can use chicken broth... but dashi is the only ingredient that makes this dish authentic Japanese food. If you know that "Japanese taste", it's always dashi.

Thank you! I explained in the blog post, but it's to remove extra starch. If you don't rinse it, the rice will be more stickier and starchy broth. We also call that style Ojiya おじや. Very similar to Zosui, but slightly different. :)
