Instant Pot Coconut Milk Yogurt - is it possible? Yes, it is, and I'll show you how in this *FACEBOOK LIVE VIDEO REPLAY** (part of Instant Pot Week). It is a lovely dairy-free, paleo, and vegan alternative to regular yogurt.
****NOTE - this is a Facebook Live video, so it is vertically shot. This is the ONLY way I can show both my face and what I'm doing on the counter without switching cameras because my kitchen is weird and I'm 6 ft tall. So if vertical video offends you, don't watch this :-)
Coconut milk yogurt definitely needs to have thickeners so that you don't wind up with anything too runny and you have to make sure you have certain starters to ensure success, so I discuss those in this video as well. I show you the different consistencies you might encounter using different methods (like using gelatin and agar) and show all the steps you need to do to get a delicious yogurt!

This helped me a lot, thank you for being clear about what substitutes are best for vegan yogurt! I've read so many different recipes for coconut yogurt, but your video has helped me actually get a decent grasp on it haha.

There's a gal youtuber, "Frieda lives bread" that has a video about as long as yours. Said she has been making yogurt years before the instant pot. Just said that she's been making it for 20 years. But she was using cow's milk. But one thing that made a lot of sense was her explaining how you do not stir up right after you have processed it in the yogurt setting for as many hours as you want. She was talking about the protein strands and stirring them right after would break them and could make them more runny permanently. She left her how's milk 1 cool right away in the refrigerator for 6 to 8 hours. Then she stirs it and puts it into jars. I have not made any yet but have been watching lots of videos trying to prevent flops since I am very analytical. It makes sense making it in the jars for the coconut milk. You would be less tempted to Stir It before it has chilled down. The one thing that is free to said was that you could freeze yogurt starter. Now that didn't make sense to me because ice cream yogurt does not have a culture in it. Manufactures say that freezing would kill the culture. So I'm in a quandary on that one too. Learning A Whole New way of cooking after many decades of success without an instapot, is disheartening to have flops. Thanks for the video.

I liked the video, tsk! Also I liked the THICKER "greek" looking kind better. Here are my questions: 1- What type/brand of coconut milk should I use? 2- Is coconut cream better to create that thicker consistency? 3- I am getting the beef gelatin stuff because that gives a thicker consistency, correct? 4- as for cultures, pls recommend a brand that gives the "greek" thicker look you showed and finally 5- I can also use some super probiotic coconut yogurt as culture, yes? If so, how much for say, 1qt?. Tks!

Hey Cristina - so... 1 - I use the Native Forest classic type of coconut milk (it has guar gum in it as a thickener). 2 - You can use coconut cream, but I almost think it's too thick - however, if you really really like thick yogurt, it definitely works. 3 - Yes, either beef gelatin or agar agar powder work to give it a thicker consistency. 4- I find that the Cultures for Health brand of vegan starter produces the thickest one . 5 - yes, I haven't actually tried that but I think the typical rule of thumb is around 1/4-1/2 cup of yogurt per quart. I do believe I read somewhere that coconut milk yogurt doesn't work AS well for starting a new batch like dairy-based yogurt does, but that may have just been one person's opinion. If you do try it, let us know how it worked for you.

Did you have to blend your canned coconut milk before you started all this? My canned coconut milk normally has a layer of coconut fat at the top. Glad someone is getting coconut milk based yogurt, gives me more inspiration to give it a go.

CMS Sultana yeah, if your milk has separated you need to stir/blend it, but that should naturally occur as you heat it as well. So no need to go nuts blending it like you would if you were to use it cold, like in a baking recipe.

yeah, you can definitely do that to thicken it up more. It doesn't thicken as much as a cow's milk- type yogurt, but it still will thicken a bit.

We finally got around to make coconut yogurt following your video! It has just come out from the instant pot! It’s a bit too liquid so we gave it a stir put in the fridge... how long should it stay there?

sorry for the late reply - have just gotten back from a week-long camping trip! But usually I leave it in for about 12-24 hours after being in the Instant Pot and it thickens. How did it turn out for you?

I do the probiotic pills all the time and it work great. I do use 2-3 capsules though. And if I use the coconut milk with no stabilizers I put the can in hot water to get it to all come together and then pour it in a glass dish not plastic and mix in capsules (break capsules open and use the powder)with a wooden spoon and put in fridge over night.

This last time I bought natures way primadophilus Reuteri multi strain I get them in the refrigerator section at my store.

Michele Spring sadly I have tried with Trader Joe’s just coconut milk, no additives and it doesn’t work😔it works with golden star.

Please help, Michele! I've been making this coconut yogurt for months now but can't seem to make it creamy. I would call the consistency mealy or grainy. The flavor is on point & delicious! I've tried different coconut milks & creams, so I'm thinking it either has to be my probiotic capsule or the agar powder. I've tried 2 probiotics with the same result. I do have agar flakes & wonder if that might give a different consistency than the agar powder. I'd appreciate any thoughts you might have.

hmmm, I've never tried it with the agar flakes so I have to wonder if it's that. I know some coconut milks can be grainy though, but you said you've tried several, so hmm. I'm assuming you tried those coconut milks by themselves, like had a bit to drink or use before making into yogurt to make sure it wasn't them?

Can you stain this like Greek Yogurt after it comes out of the Instant Pot and it’s stored in frig.?

yes, you can strain it. I typically don't just because mine already comes out pretty thick when I use the gelatin or agar, but if you want it even thicker then that's fine. And yes, I store it in the fridge after the incubation period.

What would the carb count be? Is this keto friendly? Can you use sf sweeteners during the cooking process?

Sorry, I'm not sure at all what the carb count would be - probably the same as a can of coconut milk + whatever sweetener you use? As for the sf sweeteners - typically the sweeteners you use are more for the culture to eat, not you, so by the time you eat it it's mainly gone. They need some sort of real sugar to thrive though. Any additional sweeteners you use though to flavor it for taste can definitely be SF.

Do you set the less or normal when you put the jars in the instant pot to make the yogurt?

which one do you use? I've had such inconsistent results I'm hesitant to recommend any, but if you have consistent results, I'm definitely all ears! :-)

Why do you need to incubate for 10 hours? I tried one recipe and incubated for 8 hrs and found it very tart. My kids are unfortunately used to the flavour of store bought sweetened / flavored dairy yogurt, so I am trying to make something that resembles that flavor without all the sugar. Any tips would be apreciated.

8 hours is fine if you find it tart. I just find that it's not usually tart enough for our liking until 10.

yep! It turned out good, but not as fatty as the canned stuff. Kind of hard to explain, just a bit thinner?

What is the ratio of gelatin to milk that should be used to make a thick coconut yogurt? Say you want to make half a gallon of yogurt, how much gelatin would be needed for thick results?

I'd probably use about 5 tsp or so of gelatin for a half gallon. In my recipe I like about 1 tsp to every 13.5 oz can of coconut milk. If you go much above that you do risk it turning more into a jello than a thick yogurt..

Is there anything I should know if I want to batch cook this? Can I double your recipe in the 6 quart? I'm lazy in the kitchen, until I'm not! 😂 Then I'm cooking up a storm 🌪.

My best advice is slow down when you talk and be more concise. Also turn your phone the other way. Vertical not horizontal. Sorry. Also press yogurt twice on the IP to sterilize the yogurt so you don't have to do it on the stove. Duo 6 plus here.

haha, I explain in the first IP Week video that I have to use vertical video for my Facebook Lives in my kitchen to show all of my counter, otherwise you only see my face. I'm 6 ft tall so it's really hard to get everything in otherwise! I tried once and everyone complained they couldn't see what I was doing! That's also why I'm not as concise - I try to be MUCH more concise in my regular KZfaq videos, but Facebook Lives are totally off the cuff. Also, I don't use the yogurt button on the IP for coconut milk yogurt since I don't want to scald it - you don't need to get it to the 180 F that you do with dairy yogurt and I find it happens too fast in the IP. It's much easier to control the temp on the stove.

It's a replay of a Facebook live - where people don't instantly show up and I need to wait a few minutes for people to do that. :-) I figured it would be valuable for some people to see it off of Facebook, but based on these types of contents I'm guessing you're more interested in aesthetics than actual valuable content?
