司康饼,英式下午茶点代表。微甜松软,口味回甘,添加了蓝莓,一粒粒浆果香味浓郁。不需要再涂抹果酱了。
蓝莓燕麦司康饼配方:(出品12个左右)
烘焙温度:385华氏度,或195摄氏度。烤16-18分钟,至表面金黄。
水 120g
全脂牛奶 120g
盐 2g
燕麦片(传统压制) 60g
白砂糖 60g
无盐黄油 60g
脱脂奶粉 20g
蜂蜜 15g
(可换成枫糖浆或玉米糖浆)
全蛋液 80g
低筋面粉 200g
无铝泡打粉 16g

Blueberry Oatmeal Scones
Recipe:(yield 12 pieces)
120g (1 /2 cup) water
120g (1/2 cup) homo milk
2g (1/4 tsp) salt
60g (1/2 cup) rolled oats
60g (1/4 cup) granulated sugar
60g (1/4 cup) unsalted butter
20g (3 Tbsp) skim milk powder
15g (1 Tbsp) honey or maple syrup or corn syrup
80g eggs, whole
200g (1+1/2 cup) pastry flour
16g (1Tbsp+1 tsp) baking powder
Bake at 385F or 195C for about 16-18 mins, until golden brown

太好了用的冷冻蓝莓!还愁没新鲜蓝莓怎么办呢

烘焙食谱一般都是冷冻蓝莓、因为新鲜蓝莓季节性的不普遍😊

没有这种搅拌机该怎么做?

可以手工搅拌,黄油切的小一点,先用刮刀把黄油压扁,然后按照步骤,用蛋抽(wire whisk)来做黄油、糖的creme的软化,然后再逐渐加其他材料。

请问一定要用脱脂奶粉吗?

可以用全脂奶粉,但不要用婴儿配方奶粉。因为专业烘焙用的都是脱脂奶粉,是普遍性的,所以配方里写的脱脂奶粉。关于为何烘焙用脱脂奶粉,我会在面包视频时讲这个。谢谢!
