Don't know what to make with cottage cheese? Today I'm baking Marbled Cocoa Squares, a 1950s recipe from Creative Cooking with Cottage Cheese. This booklet is part of my collection of old cookbooks, and is truly a part of culinary history!

MARBLED COCOA SQUARES
Cheese Mixture:
1c small curd cottage cheese
1 egg, well beaten
1/4c sugar
1T cornstarch
1/4t salt
1/2t vanilla
Blend cottage cheese with remaining ingredients; set aside.
Cake:
1c flour
3/4t baking powder
1/4t baking soda
1/4t salt
2/3c sugar
1/4c cocoa
1/4c butter, melted
2 eggs, slightly beaten
1/2t vanilla
In mixing bowl combine flour, baking powder, baking soda, salt, sugar, and cocoa. Combine butter, eggs, milk, and vanilla; add to dry ingredients. Beat 2 to 3 mins. Pour half of batter into a greased 8x8 pan; spread evenly. Top with Cheese Mixture, then remaining cake batter. Draw knife through layers to give a marbled effect. Bake for 40 minutes at 350. Cut into squares and serve warm or cooled with plenty of butter. Delicious with cold milk!

What a cute booklet. Yes, some recipes seemed "interesting". Sometimes add cottage cheese to my scrambled eggs, but just at the end of cooking. Couple of spoonfuls. Makes them creamier.

My family adds cottage cheese to the typical onion dip made with sour cream. The cottage cheese doubles the recipe and adds a great flavor and texture to the dip!

Peaches & cottage cheese was the best desert in the 1970s. No one would choose that now. Lol😆. It really looks good. Keep up the good work. 🌸👍🤠

Cottage cheese is alllll the rage on tic toc now. Taco cottage cheese bowl, Cottage cheese pizza bowl, puddings, deserts on and on. I am doin low carb and I put it in my smoothies and salads. Today I mixed it with my Philly cheese steak. It was delish!! LOVE your channel -new sub. So glad I found you!!

I've loved 4%cottage cheese since discovering it as a young adult, after NOT loving the nonfat cottage cheese in jello as a kid of the early 70s. Now, 30 years since, everyone has discovered its versatility and while I'm happy for the flailing family farmer, I'm chagrined that it has REALLY jacked up cottage cheese prices in my region!!

I think I would have given the Teeners special dunk a swerve as well. I do like the look of the Marbled Cocoa Squares though. Thank you for sharing.

Id definitely try this. I love cottage cheese, Benny not so much. He will eat it in the avocado dip we made in our hot dog video because it's blended smooth, but besides that he isn't going for it.

Ah yes, the texture isn't for everyone. I grew up eating it so I don't mind. I may try this recipe again and puree the cheese mixture to see if it makes a difference.

Grew up eating prunes. Have Lekvar in my fridge now. Homemade. Hungarian prune jam! But I agree, not everyone wants prune. Ohhh, the add of horseradish sounds good to me too. Ohhhh, you have the bowl that I missed out on. I guess not the actual bowl but those flowers. I just love them. But when I went back they were gonesville city. Hubby always goes for extra vanilla. We love it. Interesting though about the cottage cheese taste. Not a brownie, sounds like but totally fun to give a go. Cheers, Ivy.

Oooh that prune jam sounds tasty! I love this bowl but have never seen another piece in the wild with this pattern. If you see it again, definitely snap it up!

@@cooking_the_books It was a flatter style dish. Very fun. But I think there was a reason I didn't get it and I can't recall but when I went back, GONE! Yes, grew up eating lekvar and dio (which is ground walnuts, a little water and lemon zest if we have it), and also apricot lekvar. So fun. Happy Cooking!!!!

I finally had time to watch your video. I like cottage cheese and have several recipes. Cocoa squares sound pretty good😋. I agree with you some of them are a no-go with me especially the peanut butter, with ketchup and relish.😒

The squares were a little unusual but still tasty! I love my viewers, but I just couldn't bring myself to mix cottage cheese with ketchup and peanut butter for them. 😂

Oh I love the thought of the scrambled eggs with cottage cheese! I'm a big fan of the stuff... maybe not as much as that wonderfully illustrated woman, but still, generally delighted by cottage cheese. Well this one seemed a little strange, but certainly looked worth the effort... I have a feeling I'd quite enjoy it! Thanks for this Anna! Loved it!

My friends mom used to make something she called Cheese FineKuchen that she made for a special breakfast - it was basically cottage cheese beaten with eggs and some other ingredients and made into a pancake, sort of, and it was hard to flip. She used to make it for us for breakfast once a month. It was really delicious. Years ago my friend gave me the recipe after her mom died. I don’t remember what I did with it and sometimes I crave it. I have to contact her and see if she saved the recipe. One of my favorite uses for cottage cheese. I actually like it. I know a lot of people who hate it. I don’t think I would try most of the recipes from that cookbook. The recipe you made actually sounds good though.

The dish your friend's mom made really does sound delicious! I mostly eat cottage cheese by itself, with fruit, or in lasagna.

I'm the only one in the house that likes cottage cheese, but I'm sure all the cottage cheese haters in my house would love these. Maybe I should just make them and after they eat them I'll let them know that they were made with cottage cheese, lol. Looks great!!!

I don't know what cottage cheese she's picking up at the store, but I'd sure like to find out! 😂 I'd say the flavor is closest to a chocolate cheesecake, only not as sweet.

Hello and welcome! I'm delighted you noticed the gravel art. I've had it for a long time, but this year has been the first time I've been able to properly display it. You are so right, it's getting very hard to come by. I don't have his books, but I am familiar with James Lileks's website! I remember spending a ton of time around 1998/99 just sifting through the images and info. My favorite section was about The Gobbler motel and supper club. Completely turkey themed and completely AMAZING.

I , too, don’t understand using butter on top! Love cottage cheese though. I have a stuffed mushroom recipe that uses cottage cheese and it’s very good. Do you have a P.O. Box? I have some booklets I could share.

The butter bit has me so confused. These squares are soft and springy. I don't even think they'd hold up to butter very well unless it was melted. That is so kind of you!! I don't have PO box, but if you email me at alsbuchholz@gmail.com I'll share my current mailing address.

The squares are pretty light and springy. I'm not sure you could even spread butter on them! I think they'd have to be warm so the butter could melt.
