MARBLED COCOA SQUARES
Cheese Mixture:
1c small curd cottage cheese
1 egg, well beaten
1/4c sugar
1T cornstarch
1/4t salt
1/2t vanilla
Blend cottage cheese with remaining ingredients; set aside.
Cake:
1c flour
3/4t baking powder
1/4t baking soda
1/4t salt
2/3c sugar
1/4c cocoa
1/4c butter, melted
2 eggs, slightly beaten
1/2t vanilla
In mixing bowl combine flour, baking powder, baking soda, salt, sugar, and cocoa. Combine butter, eggs, milk, and vanilla; add to dry ingredients. Beat 2 to 3 mins. Pour half of batter into a greased 8x8 pan; spread evenly. Top with Cheese Mixture, then remaining cake batter. Draw knife through layers to give a marbled effect. Bake for 40 minutes at 350. Cut into squares and serve warm or cooled with plenty of butter. Delicious with cold milk!
