Hey guys! You ready to learn how to make the ultimate comfort food? Risotto is a great dish to master, especially for those times when you feel like you don't have much in the fridge. With just a few ingredients and little patience, you'll be able to whip up this decadent dish on the fly. This dish is SO SATISFYING that you'll forget its vegetarian! Or serve this up as a side dish with steak, pork chops, or even fish to get that full on steakhouse experience.

TIME: about 1 hour
INGREDIENTS:
3.5oz / 1 cup Oyster Mushrooms
4 tbsp Butter (DF Sub: beef tallow, duck fat etc., coconut oil PLUS extra salt)
3 tbsp Garlic Oil
1/2 tsp Salt
1/4 tsp Pepper
2/3 cup Leeks
6 sprigs of fresh Thyme
6 cups Water
2 tbsp Fody Chicken Soup Base
1 cup Arborio Rice
1.5 oz fresh grated Parmesan

Glad to learn that oyster mushrooms are the one type that are ok. We just inherited an oyster mushroom grow kit and it was gonna be hard to watch my partner eat all of those.

You can totally do this!! I wasn’t a nutritionist when I found out about this diet. I was just a regular person like you. Committing to this lifestyle change was the best thing I ever did. It completely changed my health and my life! That’s why I really want people to try it. If I can do it, you can do it!!❤️

This has butter so to me it isn’t dairy free

Hi Chris! Just swap the butter out for duck fat, beef tallow, pan drippings from roast chicken, even coconut oil would work. Chicken and duck fat are my fave. I actually just made this last night using chicken drippings. Sorry, if I wasn’t more clear about that. You can just skip the cheese too - it’s still going to be amazing!
