I have just cooked this and wow 🎉. I don’t normally write reviews , however was compelled to . Been cooking curry’s for many years and have never cooked a curry which tastes like this . Amazing . I think it may have been the curry base and spice mix that has made the difference along with the simplicity of cooking . This will be a regular from now on. Also first time i have tried a glebe kitchen recipe 😊

I have a tikka masala recipe on glebekitchen.com (restaurant style and nearly restaurant style both). I don't have a sweet tooth but you could try either recipe and add a little jaggery or brown sugar to sweeten it up. I don't have a video for it but the restaurant curry at home video would show you all the techniques needed.

A decent curry. Anyone interested in his reference to 'my- ard' in the science reference, should note this is maillard - chemical reaction when you heat sugars and proteins, and is correctly pronounced as 'my-are' - it's french

This is a very good Indian restaurant cooking channel which I would recommend. Your Jalfrezi is almost exactly the same way that I cook it as curry is my favourite.

Brother, Top down your the best teacher above all. Tried the Madras , prepared all base and garlic ginger paste exactly as you teach and BOOM!!! Fullness flavor mouthwatering greatness. Hi there looks like another great dish, not sure if I'm missing something..... Have made onion base and spice mix, them when I make your curry's it says to add more or less the same spices, is that wot you do? If not how much spice base do you add. Thanks S

The curry base is really very mildly seasoned. Think of it as a bit of a blank canvas. The jalfrezi recipe has a lot more spice (and different spice) that is bloomed in oil. There's a lot of flavour there. On top of that there's blistered onion and green pepper, green chilies, tomato etc. There's a link to the actual detailed recipe complete with detailed instructions in the description.

Top tip, 'pre'cook the chicken by broiling it in the curry base, boom, quick, succulent & chicken juices 👍👌

That's one way. I've tried that. You do get the juices into the chicken. The challenge I have with it the chicken doesn't get brined or coated with spices as it does in my pre-cook method. I lose the juices but I gain more flavourful chicken. Like I said - it's a really tough tradeoff.

How long does Garlic Ginger paste keep for in the Fridge? I bought some Garlic, already pasted, and it's horrible and has vinegar in it. is it Garlic / Ginger 50% / 50%?

Yes. 50/50. Keeps for quite a while. I typically get through a batch in about 3-4 weeks so that long for sure.

A piece of caution to novice cooks ( like me):- pay attention to how much curry base is required for this recipe itself. I got confused and put extra water as well as skipped the step of frying it before putting it in the main gravy which ultimately hampered my 3 hours of prep and something lower than average turned out that could have been 'a dish to remember' Suggestion :- if the curry base proportions are modified to suit this recipe and included in the main recipe instead of a separate link it might help novice cooks like me. Amazing tips though!!, can be used in other Indian recipes too. Thanks

I appreciate the feedback but to replicate the foundation recipes in every individual curry recipe would make for a lot of repetition.

Is it possible to add the precooked chicken's stock into the curry base? Does it affect the shelf life of the curry base?

I put a lot of salt in the chicken poaching liquid so you will need to watch your salt levels if you do this. I can’t speak to shelf life as I have never tried.

What's your take on spiced/seasoned oil? Over the past year, I've heard a lot of talk about "secrets" to the "elusive" BIR taste that everyone is chasing. Some insist that the secret is in the aluminium pan, others in the base gravy, others still in the seasoned oil. I'm curious if you've tried using it, either from scratch, or extracted from finished curries/onion bhajis/base gravies, etc. and if you've noticed a discernible difference.

IMO the "secret" to good Indian restaurant style cooking is no secret at all. It is about technique. An aluminium pan is a nice cheap pan that conducts heat well. That gives you better control. Aluminium is second to copper only. People that chase the perfect base gravy make me smile. The more "secret" ingredients you add to a base gravy the more all your curries taste the same. Spiced oil is something I get in every single curry I cook. Blooming your spices in oil (rather than boiling them in gravy) extracts oil soluble flavour compounds. So you wind up with a spice infused oil that carries flavour into every bite. Get this technique down. Fry your base gravy hard to get solid Maillard reaction. Two simple things. Do that and you will be cooking with the best of them...

​@@glebekitchen I've heard conflicting opinions on base gravy. I see the words "layers", "depth", and "body" stressed in complex gravy recipes. Have you ever cooked a complex gravy, or are you making an educated presumption? I can't tell if you know what I mean by spiced oil from your reply, but people believe that using spiced oil at the beginning of curries (i.e. where you'd normally use regular oil) is a secret to that BIR taste.
