Here’s a show-stopping dinner you can serve during this holiday season. This beef roast made with a piece of top side beef, makes you hungry even before you whisk it into the oven and gives you plenty of time to prepare sides while it roasts in the oven. Serving the roast with the classic English 'yorkshire pudding' is an easy way to make this dinner extra special.
Gravy on top, made with vegetable stock, roast potatoes and some grilled cherry tomatoes top it off in a splendid way, just like the north star on top of the Christmas tree.
Ingredients:
Per heated oven for 30 minutes at 180°C
Topside Beef - 3.750 kg
Olive oil - 1 tablespoon
Thyme - Few stems
Rosemary - Few stems
Cook the meat for 1 hour 15 minutes
For Gravy:
White onion - 2 nos
Carrots - 4 nos
Shallots - 5 nos
Celery - 5 stems
Leak - 1/2 stem
Garlic - 3 nos
Thyme - Few stems
Rosemary - Few stems
Olive oil - 1 tablespoon
Plain flour - 2 tablespoons
Vegetable stock - 1 litre
Red wine - 1 glass
For Roast potatoes:
Baby potatoes
Garlic
Olive oil
Salt
Pepper
Sea salt
Herbs
Carrots
Broccoli
Cauliflower
Butter - 1 cube
Honey - 1 tablespoon
