Ingredients (Serves 4 | Prep time: 10m | Cooking time: 45m | 146 calories & 3g fat p/serving):
- 500g Parsnips
- 50g Honey
- Salt and Pepper
- Oil (to roast)

Did this tonight w a few changes. I did garden parsnips but also carrots. I steamed them instead of boiled. I did some oil so they wouldnt stick, but then just a smidge of vegan butter when i ate them. I could eat this EVERY single night! So glad my garden is loaded w parsnips! OMG good. TY for the simple healthy easy recipe.

These look so yum Warren! Gotta try them. I never really considered roasting parsnips. I never really considered doing anything with parsnips lol. My go to roast veggie is sweet potato or pumpkin. But these look so good. I'm adding the ingredients to my shopping list! :0) Hope you had a merry christmas! :0)
