Episode 1403 - The iconic television host, artist and master chef Jacques Pépin joins Ming on Simply Ming for chicken livers two ways. Jacques makes not one, not two but three dishes!
He starts off with Chicken Livers with Mushroom Port Cranberry Sauce, then makes Olive Oil Small Potatoes, and tops it all off with an incredible Chocolate Soufflé. Ming matches that with a Hot Chicken Liver Mousse with Bacon-Thyme Sauce.

I have so loved Ming for years. But when I saw the respect, good humor and gentleness that he offered to Jacques Pepin (who is after all my idol of all chefs) I loved him even more. This is a new favorite cooking video. Thank you.

Nearly all of my cooking skills I’ve learned over the years are from watching Jacques Pepin. I always cook my omelettes ( perfectly ) by watching and learning from his videos. Excellent!

@@clintwhatley7981 Did you know Jacques had a stroke when he hit the age of 80? He couldn't go to New York for the birthday celebration his friend had arranged for him with 80 birthday cakes. They Skyped from NY to his home.

@@joannbrooker9282 It's great to see the old Food network guys get together, nowadays it's nothing but competition, not my cup of tea. I had the pleasure of meeting almost all the chefs, Ming Tsai, Bobby Flay, Mario Batali, Martin Yan, Emeril Lagasse, Rachel Ray, Giada De Laurentiis, Wolfgang Puck, Morimoto, Guy Fieri, Anthony Boudain, but I never met Jacques Pepin. I hope one day I can so lucky to cross paths with Jacques Pepin, that would be a great day for me.

@@fifermcgee5971 did you know that Jacques was in a terrible car accident in the 1970’s? No one believed he would make it, and the doctors operated as they had never seen so many injuries in one person at one time. His will to live and to create is what has kept him going. What a great teacher.

It always is a pleasure seeing these two socialize together and just happens they are both renowned maater chef's in they're own right. To cook food, is to love food. 😃

So many chefs are intense and stressed and bang. bang. bang! Jacques just calmly cruises through, so competent and relaxed, and just loving the process. He just epitomises the love of food and cooking, and that it doesn't have to be a stressful experience :)

Adam Poll, you said it perfectly, “just calmly cruises through...” I think that’s what makes him so very enjoyable. He’s such a master and not bang, bang, bang, but perfectly paced and fast enough. Perfection. And, he’s not the least self-absorbed, he’s so pleasant all the time. But, you said it, exactly.

eh... i don't think you're giving ming enough credit there are certainly some cook show hosts who talk over Jacques and don't pay the respects they should be paying. a quick youtube search will show you some examples

Amen. We are going to miss master chef Jacques Pepin when he is no longer with us, but as long as we cook great food he will still be tight here beside us. What an honor to have grown up watching him cook. ♥️

I was raised on liver, cooked by my mother as well. I still love it. I will also drink whatever you put in front of me, haha. Love Jaques and Ming, probably my favorite two chefs! I do miss Yan Can Cook though, he was always entertaining to watch with his giant cleaver.

To the uneducated this may seem like he is fawning...it's not. He just has the chance to show respect to a legend that is still alive. Been an off/on watcher of the show, but this was a superb blend of art and class. Bravo Ming, my hat is off to you.

We were lucky enough to meet Ming a few years back. He is as nice and genuine as he seems on screen. Also extremely funny could probably make a career as a stand-up comedian.

Ming Tsai was one of my favorite Food Channel hosts along with Emeril waaay back in the beginning. Paired with Jacques qui est la maître de cuisine dans tout le monde, c’est simplement un rêve à voir ce duo

I don't know how I missed this one - but I love the both of you and together you're amazing! I was looking for a chicken liver recipe for dinner and came across this. Ming's mousse as an appetizer & Jacque's Livers and potatoes for dinner! I made the chicken livers, 10 yr old boy wouldn't touch it. Just pureed the whole thing and out came a really decent pate. It actually worked and held up well to all the fancy pate recipes out there.

I have a feeling that in years to come, maybe Ming will become somewhat like Jacques, well revered, because he is so very good, yet very humble and selfless, much like Jacques. I love these videos with the two of them, can’t get enough.

Wow. I’ve Sean Jacques make soufflés in different ways. His apricot & pistachio soufflé, ham & broccoli rabe soufflé, & cheese soufflé. This chocolate one looks easy compared to other recipes that seem very fussy. I’m practicing my soufflé skills so they’ll always come out perfect.

Chicken livers fresh from the still ubiquitous neighborhood butchers, sauteed in butter with garlic, onion and thinly sliced apples, over rice-one of the easy cheap meals that often saved this art student from starving in Paris (for 2, for 10 francs, in 1987.) His methods, followed correctly, will make simple nutritious, but more importantly-mouthwateringly delicious food. You will find yourself demanding better quality in other aspects of your life, if you up your food game. (Affordable Macrobiotic and Vegan/Vegetarian groceries/Restaurants abound there, as well. Or did. Not sure if Whole Foods has bought France yet.)

Ketchup is amazing. Don’t be afraid to use it in a strong sauce when you need a little sweetness, tartness and body.

Ming, Just FYI , I live in Brazil and Brazil is the largest exporter of poultry in the world. However, a large percentage is exported to Muslim countries and they do not eat anything from the inside of the chicken, we have chicken livers, hearts, and gizzards coming out of our ears. We can buy a kilo of chicken hearts for a couple of dollars. Brazilians put them on a spit and barbecue them all the time. You can always find them as an appetizer in a Brazilian churrascaria. Bon apetite
