Today we are making a Smoked Tri-Tip in the Masterbuilt Smoker with Lemon Herb Sauce. To start, we’ll marinate the Tri-Tip with a Mexican-Spice rub, then smoke it in the Masterbuilt Electric Smoker. Next, we will apply mayonnaise and sear over high heat in a cast iron skillet. To serve it up, we'll make a Lemon-Herb dipping sauce.
Marinade Ingredients
• 4 tablespoons olive oil
• 2 teaspoons Kosher salt
• 1.5 teaspoons black pepper
• 1.5 teaspoons dried mustard
• 1 teaspoon smoked paprika
• 2 teaspoons ground cumin
• 2 teaspoons onion powder
• 2 teaspoons chipotle powder
Lemon Herb Sauce Ingredients
• 1.5 teaspoon Kosher salt
• 2 teaspoons lemon juice
• 1.5 teaspoon dried rosemary
• 1 teaspoon minced garlic
• 3-4 tablespoons dried thyme
• 2 teaspoons chili garlic sauce
• 2 teaspoons ginger paste
• ¾ cup olive oil
Protein Ingredients
• 1 Tri Tip Roast
• ½ stick Irish butter
• ¼ cup (approximately) mayonnaise
• 2 tablespoons Worcestershire sauce
Recipe Instructions
1. From the marinade ingredients, apply the olive oil to all sides of the tri-tip.
2. Mix the rest of the marinade ingredients together, then sprinkle of all sides of the tri-tip.
3. Place ingredients and tri-tip in a gallon Ziploc bag and marinate in the refrigerator for 2 hours.
4. Set the Masterbuilt electric smoker to 250 degrees F and add some oak or mesquite wood chips.
5. Place the tri-tip in the Masterbuilt smoker.
6. While the tri-tip is cooking, place all of the lemon sauce ingredients in a blender and blend well. Place in the refrigerator until ready to serve.
7. Remove the tri-tip from the Masterbuilt smoker when the internal temperature reaches 110 degrees F. For this cook is was 34 minutes.
8. Let the tri-tip rest for 10 minutes, then apply the mayonnaise to all sides of the tri-tip.
9. In a cast iron skillet over high heat, melt the butter and add the Worcestershire sauce.
10. Add the tri-tip and sear for approximately 2 minutes per side.
11. Remove the tri-tip and let rest for 10 minutes.
12. Slice the tri-tip, drizzle with the lemon-herb sauce and serve!

I am going to smoke a tri-tip today and I would of never thought of using mayo but I will today. Love your videos and your partner in crime is great! ps I hope you keep not wearing socks!

I used to have a button saying ”i am not deaf - i am ignoring you” which i wore all through my teens - your shirt reminded me of that - thanks :) hehe That was a large tri tip as you said, but it came out just perfect. Lately there has been no tri tip at all here, but i hope they will get some in when speing comes around :)

I own a few smokers and barrels but the lg pellet with 8 functions is perfect I did 6 briskets that came out perfect nice crust and very juicy

Looks good, Jeff; even though I'm not a fan of asparagus. Sounds weird, but you could probably do the same thing with fresh green beans. That is kind of a hillbilly test for you; have you ever had fried green beans? I have. I also have no problem with you cooking without shoes ... as long as you don't cook with your feet. Thanks Ken. I've had fried green beans and pickled green beans and just about any other way. I've also picked my fair share and removed the strings 😁. My dad's got a farm with a huge garden.

One of my favorites on the beef end of things. The Lemon Herb Sauce and the whole process was so much more than just throwing it on the grill. I may need to do a copycat cook. May just turn out better than huli huli chicken. lol

Jeff this is a great video, can’t wait to try this, I always use Mayonnaise on fish so why not beef. But Jeff dump the serrated knife seriously, buy yourself a sharp chef knife, I recommend the Victorinox Fbrox 8” chef knife, you’ll see and feel the difference. Only $35 on Amazon.

I've always loved your recipes! I had a Masterbuilt portable smoker and recently got a Cuisinart 30" electric smoker, but it is identical to the MB 30. I am having some difficulties due to me overthinking all of this, and also due to seeing many different methods; it appears as though you probed the meat, slid it in the smoker and THEN turned it on to temp? Or did you have it to temp and simply put in the meat before the chips were smoking? I was always under the assumption that you want to get the smoker up to temp, (which it will do in about 5 minutes) but you don't want to add the meat until the smoke is rolling inside the box? Correct me if I am wrong, or if you have various methods. I just don't want to get the meat in before the chips are smoking or finished smoking.

Masterbuilt smoker was already on. I did add the chips after I put the tri tip in, but not for a specific reason. Just hadn't remembered 😀. It still had plenty of smoke in the end. A best practice is heat smoker, add chips then add protein. With that said for anything that smokes for 1.5 hours or more, I doubt you will notice much flavor difference if you add the chips 15 minutes ahead of time or at the same time you start the meat. I initially forgot to mention it, but if anyone needs convincing that the mayo doesn't make the end product taste like mayo; instead just aids browning/crust formation, try an inexpensive grilled cheese sandwich. Use a light, even coating of mayo and use a quality real cheese (I like a slab of colby-jack). I think that you will find that you get a deeper brown more quickly and a HINT of different flavor, but it will not taste like mayo.

Yea sir. I use Shipt to deliver my groceries. The website said beef roast (on sale) and the tri tio showed up. Biggest one I've ever seen.
