Happy New Year! This noodle salad is tasty (even without meat), light, refreshing and vegetarian friendly. Made with soba noodles (buckwheat noodles) with sesame-soy-lime dressing and perfectly complemented by mango on the side. Soba noodles have less calories,more fiber, protein and contains essential amino acids. When buying soba noodles, check the ingredients and choose those that are made of 100% buckwheat or at least have the highest percentage.

Ingredients:
1 cup peeled carrot
1 cup shredded radicchio
1/2 cup seasoned seaweed
1 bunch broccolini
90g soba noodles (3oz)
Dressing
1 tbsp soy sauce
1 tbsp mirin
1 tbsp sesame oil
1/2 tbsp sugar (honey or any sugar substitute)
1 tsp sesame seeds
juice of half lime
pinch of salt
pinch of pepper
Garnish
Sesame seeds
Fried shallots
Mango
