Sous Vide Method for Jarring Mandarin Oranges. A perfect low carb Summertime snack - keeping Mandarin Oranges fresh and delicious longer.
Ingredients/Supplies:
Use 6 - 8 oz. sterilized jars - see Sanitization episode!
After sterilization, leave jars in CSO to stay warm
Use 3 lbs mandarin oranges (about 10)
Peel mandarins
Remove as much pith as possible
Set mandarins aside
To make light syrup - combine 4 c water and 1 c sugar in a small pot
Bring to rolling boil, then turn off - leave on stove top
Remove warm jars and lids from CSO
Snuggly fit as many slices in each jar as possible
Fill each jar to line (leaving ½ inch space) with light syrup
Lightly shake to settle mandarins
Finger tighten each lid
Place jars on perforated pan
Load into CSO - Level 2
Set CSO - Steam Mode Only - 210 degrees for 10 minutes
When done, turn off CSO. Leave jars inside additional 5 min - DO NOT OPEN DOOR
Then, open door and leave jars inside additional 10 minutes
Remove jars from CSO - place in fridge to chill at least 12 hours, then enjoy for 2-3 weeks
