Bandi's Carrot Muffins Recipe ~!
Ingredients
(Bottom diameter 5cm muffin pan 9 pieces)
Egg 100g (2 eggs)
Light brown sugar 100g
Salt 1g
Starch syrup 10g (=Corn syrup)
Oil 80g
(I recommend canola or grape seed oil)
Cake flour 100g
Baking powder 3g
Cinnamon powder 3g
Carrot 100g
Pecan 60g
Things to do before making batter ~!
1. Grind or chop the carrots
(I recommend a cheese grater)
2. Remove the water from the carrots with a kitchen towel.
(If you do not remove the water,
Moisture of carrots will make damp muffins)
Process
1. Add sugar, salt and starch syrup to the eggs
2. raise the temperature of the eggs to about 38°C.
(When you put your finger, it would be warm enough.)
3. Whip with hand mixer to make ivory-colored bubbles.
(If the drop marks remain for more than 3 seconds, It’s done)
4. Add the sifted flour, baking powder and cinnamon powder
and mix with a spatula.
5. Add oil and mix it well
(If you stir too much, the muffin becomes a hard texture.)
6. Add carrots, pecans and mix
7. Spoon batter into prepared muffin cups, filling each 2/3 full
and Bake at 170°C for 20-25 minutes.
(Please adjust the temperature and time according to the oven.)
※ Reason for warming eggs ※
As the temperature of the eggs increases, the surface tension weakens.
It becomes an advantageous environment for foam formation.
