Smoked Pork Belly Sandwich on the Outlaw Patio
Texas is known for there awesome BBQ Plates and Pork Belly is a southern delicacy in my opinion. Why not combine the best of both worlds!!
First thing you have to do is find or source a pork belly. You can use a pork butt if you can find a belly but it's hard to beat the flavors of pork belly. The pork belly I have came from The Butcher Shoppe in Pensacola. Make sure to check them out on Facebook!
This was a 4 pound pork belly with the skin removed. I seasoned it with a good layer of Killer Hogs TX Rub. You can use any season you would like, I am just shooting for the Texas flavors with Salt, pepper and Garlic. We applied a heavy layer of rub to build that good bark during the cook process.
We got the outlawpatio.com/ fired up with some www.royaloak.com/ and smokerwood.com/ . You can cook this recipe on any pit you would like. Just make sure to keep a clean fire and a steady 275-300 temp.
Once the pit came up to temp we got the pork belly on. I mixed up a spritz of 50/50 mix of Killer Hogs vinegar sauce and water. Make sure to strain the sauce that way it will spray out of the bottle with out stopping up.
We spritzed the pork belly about every 45 minutes and made sure we were building a good bark. At about 3 hours it was right where I wanted it and it was time to wrap.
We wrapped the pork belly in butcher paper that way we could keep that awesome bark and crust we worked so hard on getting. Placed it back in the pit with a www.thermoworks.com/ DOT and watched the internal temps. Once it hit 198-200 we removed from the cooker and allowed it to rest for at least an hour.
Once we removed it from the butcher paper, we rough chopped it before building the sandwiches. Now is the time you can add any sides and plate it how you would like. I had some thin sliced onions and pickles to top the Texas Toast Sandwich.
WOW!!!! This sandwich was unreal. Packed full of flavor and richness. Topping it will the onions, pickles, and vinegar sauce just took it to another level!!
