Learn how to prepare an absolutely delicious GLUTEN FREE Mona or Rosca de Pascua, the EASTER BREAD typical of the Spanish Mediterranean regions. This Easter Bread is so soft that you will find it hard to believe that it is gluten-free, so don't miss out!
This Easter Bread is: GLUTEN FREE, OPTIONAL LACTOSE FREE, OPTIONAL EGG FREE (Substitutions below)

👉 INGREDIENTS:

90 g buckwheat flour
315 g corn starch
45 g tapioca starch
130 g sugar
10 g psyllium husk
15 g xanthan gum
9 g salt
4 g dry yeast
300 g milk or vegetable drink
100 g egg
40 g aniseed liqueur
80 g butter
Grated zest of 1 orange
To decorate:
Egg for brushing
3 boiled eggs
3 tablespoons sugar
👉POSSIBLE SUBSTITUTIONS:
✔️ Buckwheat flour, for any gluten-free cereal or pseudocereal flour: rice, sorghum, quinoa.... You will have to increase the quantity of milk or vegetable drink by 20 gr.
✔️ Corn starch for certified gluten-free wheat starch or rice starch (How to prepare it at home: • CÓMO HACER HARINA DE A... ).
✔️ Tapioca starch for potato starch (tapioca = cassava).
✔️ Egg for the same amount of aquafaba.
✔️ Milk for vegetable milk or lactose-free milk.
✔️ Butter for margarine.
✔️ Sugar: if you cannot consume sugar, use your usual sweetener according to the manufacturer's equivalents.
✔️ Xanthan gum and psyllium husk: I haven't tried just one. I can't be sure that replacing one of them with more of the other will give a good result.
