As a child, one of my favorite foods to snack on was banana bread. Growing up in the Philippines, there was an abundance of bananas, and the warmth of the climate made them ripen up so much faster.
The smell of the banana bread filled up the house, and it’s such a sweet, amazing aroma. Every time I make banana bread (among other things), I think of home.
I developed this recipe when I was in California. Took me a while to make it right. I had taste testers (family and friends) for constructive criticism, until I finally developed “the one”. My brother in law was one of those fortunate enough to taste test. He raved about it so much I shipped loaves of banana bread to him and my sister in Omaha, Nebraska.
Now the sweet, amazing aroma fills my home in Upstate New York. I literally have to bake this every week when I can, because everyone fights over it!

THE ULTIMATE BANANA BREAD
🍌5 very ripe bananas
🌰3/4 cups light brown sugar
❄1/4 cup granulated sugar
🍦2 tsp vanilla extract
🥚2 large eggs
🧈1 cup unsalted butter, melted and cooled
🥐2 cups all purpose flour
🥖1 and 1/2 tsp baking soda
