These corn ribs that I cooked on my Weber Kettle BBQ are an absolute hit.
Quick, tasty and super easy to make.
Ingredients:
Fresh corn on the cob (husk a silk removed and then quartered length ways)
Unsalted butter (melted)
Your favorite taco Seasoning
Parmesan cheese (finely grated)
Coriander (chopped)
Lime juice
Hydration:
1 x beer

Mate, made these tonight, but gotta tell ya , I gave up on cutting them into quarters! I ended up cutting them into half ( along the length) and then cut them in half vertically, so each one was about 70 mm long but a half cob in thickness! They were sensational, took a bit longer to cook, ie 2 stubbies but I coped ok. I actually put them on when I stoked up the coals to reverse sear a tri tip, gave them a 15 minute head start, then seared the meat…bloody awesome!

If you have a low fire at the end of a cook and you're still around 250F. Place the corn around the inside of the fire for 20 minutes. After that you can roast 1-4 at a time over center direct flame for about 10-20 seconds. It works! Good video thanks for sharing

Perfect for after you fire the Webber up at the end of an good reverse sear steak! Always seams a waist ! Next time definitely trying these!
