French guy here ! As far as I know, we don't do these kinds of thin slices on the barbecue. We are using some kind of device with a dark stone on top, and putting the meat right on it ! We call it "Pierrade" (because "pierre" means stone). It's a family dish where everyone manage it'q own pieces of meat But next barbecue, i might try your idea 😉

Korean BBQ is exactly like this. It's really better named Korean-American BBQ because it was devised by Korean immigrants in Los Angeles and it makes use of a number of cuts that aren't traditional for high temperature cooking, like brisket.

@@crimfanKorean BBQ actually really originated in Korea or Manchuria. I followed similar instructions some two months ago, only that was supposed to be Korean Barbecue (as a father's day extra I got a dome shaped cast iron grill "plate" and I figured that had to be a hint).

Yesterday I bought pack of 4 picanha slices, ~100g each. It is a really great and fast way to enjoy beef every day. Slicing into minute steaks is not the problem, it is always about the quality of beef.

Hugo Boss the Japanese do not have a long history of grilling; modern Japanese BBQ was heavily influenced by Korean-Japanese immigrants in the early 20c. It was the Koreans who introduced the term “yakiniku” and this method of griling. So no, this isn’t rather Japanese - it’s rather Korean. Teppanyaki, on the other hand, is “rather Japanese” although I have the feeling the Chinese will have their story on that one

I’ve been slicing scotch fillet paper thin for years. I salt and pepper, flash fry it on my bbq plate and serve it with crusty bread and baked garlic (bake garlic until it’s soft, caramelised and spreadable like butter- and spread it top and bottom instead of butter). I’ve been asked more than a couple of times to ‘cook those fancy steak rolls’, friends, family, mates (even going to my mates place and doing the rolls at his party for him). Fancy it’s not but rather so simple. Just get fundamentals right and it is the best steak Sanger you’ll ever have. Quality meat with good marbling cooked fast and high, salt and pepper only, caramelised garlic in lieu of butter. Have everything ready cos literally 1 minute after throwing the plate it’s coming off!

Delicious! Only thing that I would change is to put at least 2-3 cloves of garlic in that herb butter and then I would proceed to cut the whole piece of brisket into thin slices and start grilling 😛🥩

to mix the butter thoroughly you need a bigger bowl and mixing it for quite a bit so that herb is infused nicely... mixing like that many places inside the butter wont get the herb..

I have to tell you that when you sliced that raw brisket parts of my body kind of puckered ! But watching you cook it on super high heat and fast it made me think wow , that might just work for a sandwich. My briskets usually take 10-14 hours to get them where I what them, but now I think I’ll sacrifice one (or part of one) and test your method. Never hurts to try something new.

Typical street-style in South Africa too, typically brisket or chuck(my favourite), but we cook it like super well done, on very high heat - we call it "shisa nyama" which literally means burnt meat. It's awesome.

Could you cook those steaks directly on top of the steaks? Without a grill grate, just meat on coals? Or, just stack the coal with a cylinder so it get high enough that it's less than an inch from the meat?

While I'm not French, I lived there and been back several times, and I've studied and cooked French as a chef for the past 45 years. The French don't use the brisket this way. They use very thin strip steaks, skirts, hangers and fillets and pan-fry or saute them very quickly and usually quite rare. They serve them either with a compound butter--as in this video--or with a pan sauce from deglazing the saute pan with shallots and wine. Finish with butter or cream and serve.

try marinating a cheap cut of meat like an eye round in pineapple juice for an hour or 2 to tenderize it. the acid in the pineapple tenderizes it better than any other way.

It's not that only french have butter everywhere. The point is it's very hard to get hold of a good butter because you know! We all know! There are many breads and who knows the butter itself might want to spread on multiple breads before it finally settles with a rich multi-grain bread even if it's not good looking. Damn!

Thin steaks like that(sometimes even thinner) are the way most Brazilians eat steak in everyday life. Although it is not my favourite it has some advantages. For example, it is good for most cheap cuts of meat; it cooks fast; it develops nice browning flavours etc... Even if it gets on the tough side (mostly it does because brazilians eat meat well done t.t) as it is thin steak and it is cut in thin slices, its not chewy.

All BBQ's I've been to, the French seems to grill merguez and other sausages. If some families want to get really over the top, they grill kabobs. I've never seen steak on a grill, thinly sliced or otherwise.
