hi Guga, in Turkey the most authentic way of making this is to use meat (mostly lamb) ground with cleavers. The technique keeps the meat super juicy compared to pre-ground version.

I live in the Netherlands and all the Turkish shops sell "Turkish pizza" it's a durum with ground beef, you can order it with lettuce, cheese, tomatoes and onions. It's served with garlic sauce and spicy red sauce. Is this something that is actually sold in Turkey?

Turks won't get triggered over something like this, we've seen much worse ripoffs. And also it's not as wrong as you might think. That bread he makes is something like Pide, and it is historically and etymologically linked to Mesopotamian Pita bread, just like Pizza. Basically they are relatives.

It is always nice to see people appreciating our food. What Guga had in Turkey seems like a variation of "Tepsi Kebabi" from Hatay region. If you add ground lamb, onions, garlic, green peppers and parsley to the mixture and cook it the same way with some tomato sauce and melted butter it will be a lot closer to the original. It will taste even better as well.

@@devastatheseeker9967 Typically speaking, a pie has "bread" on top and bottom, but does need a "bread" layer at the bottom. "Bread" being used as a term to loosely define anything made by cooking a dough made from flour and water. In this case, the bread was acting as more of a lid for baking purposes. This is an ancient technique and is seen in some form in a lot of cultures' cuisine. It is why beef wellington is a pastry wrapped roast. Although evolved from its original iteration, the pastry wrapping was originally for just cooking the meat in what was essentially disposable cookware.

I'd say it looks something between Güveç Kebab and Tepsi Kebab. Güveç kebab is usually done like this, terracotta pot and Pide bread as lid. But it has more ingredients, like stew. Especially onions and garlic are a must. Needs more tomatoes and peppers too. The thing he did ground beef looks like Tepsi(tray) Kebab, but its usually made with metal trays, not terracotta pots (also needs more ingredients)

Hi GUGA! Turkish fan here, love your content. If something was to be called "Turkish pizza" it would be "pide". It is like a boat shaped pizza. You stretch the dough into a boat shape and put on any topping you want. However we like the dough texture crunchier than a pizza. Most popular toppings are kıyma = ground beef, kavurma = stir fried beef sliced into little pieces, kuşbaşı = smaller pieces of beef with vegetables. I would love to see you make a "pide" with smoked shredded short rib I think it would be "AMAZING 10 out of 10 will highly recommend". It would be like the "kavurma style pide" but 10x better. You can add chese on top also, i like it better that way but it is not the traditional way. You also cook pide in a big stone oven like pizza.

what I really like about guga is that he seems very down to earth, especially with the ingredients he uses. opposed to many other cooking channels, he doesn't make it seem like "you need to use these expensive ingredients and tools to make good food!" and instead encourages us to try it from home, with conventional equipment and ingredients

NEVER eat food with your left hand in Turkey or any Mohammadan country. They traditionally wipe their butts with that left hand, and they have not learned to use toilet tissue yet. They just wipe with their left hand and then wipe on the wall or their pant legs. That is such a disgusting dish.

As a Greek I have to highly recommend you try a plakuntos ( Greek pizza) which is traditionally topped with olive oil, onions, cheese, garlic, dates and herbs. Some say that's where pizza as we know it today originally came from.

In the Netherlands we have Turkish Pizza. But it’s fastly different. And actually looks more like a pizza. But can be rolled up like a burrito. (also called a wrap here sometimes.) It’s more a flammenkuche.

According to this I made a ham, mudtard, and cheese pizza. It was between two pieces of white bread. My brother made a top ramen pizza. All he did was cood a bowl of ramen and put bread crumbs on top. Best pizzas ever.

He admits it can be a good food item, but demands another name for it. He also said "Americans" in a tone like "what did we expect". I must say I am inclined to side with him....

Well, that was "someting"... But since you went to this side of the ocean cuisine. I have to make a request to you, which I'm honestly shocked you never tried in this channel before. Francesinha! It's a Portuguese dish that has everything you'd like: sauce, eggs, steak, sausage. I would really love to see your take on that compared to a more traditional recipe.... Nevertheless, my Brazilian side also have one other request: "Cadê o dogão paulista nos vídeos de hotdogs?"

We love to make something similar and use smaller individual non stick dishes, We then add filling of choice and pizza dough as you did but once cooked you can upturn on a plate loosen the pizza on the edge and remove the dish. Wecall it Pizza Pot Pie 🥧 🍕

Hi Guga... subscribed to all your channels, (even that one you think no one knows about), I have your book... i.e. I am a died in the wool follower. Now, having said that, this Turkish "pizza" is as much pizza as "Turkish Delight" is a delight . Hint, Turkish Delight is a [piece of candy with overpowering overtones of cheap perfume. And this "pizza" that uses the pizza crust as a pot lid... is not pizza. I suggest the use of the erm, "Turkish Train Wreck" or 'Orient Express Wrecks in Napoli" This is basically an Italian inspired Schwerma .

There's a turkish restaurant here that hired us to do some plumbing work in there. When we finished, we were met with a big platter of free food. Man, i love turkish food, it tastes so delicious. They wouldn't tell me how it was seasoned, secret recipe apparently.

Back during OIF we had a Turkish restaurant on base, and they made their "pizza" for us, they actually called it "Meat Pizza." It was good.

You need to try national brand pickled mangos extra hot, it is one of the best descriptions of hot yet flavorful food/ spice and I'm curious what It can do on a steak.( Literally whole mango sliced and pickled in container with many middle eastern spice) good luck guga.
