I made this last week, and have made it again this week! Love it, love it, love it! I also made Crile's Lite Lemon Dressing, Strawberry Balsamic Dressing, and the Baritone Dressing...used each at different times when eating the salad (these are in the "The Plant Based Woman Warrior" cookbook)...SO GOOD!!!

Jane, I have eaten kale stems for decades. The stems are often the sweetest parts. They do require a bit longer cooking than the leafy part.

I cant swallow kale not matter how small it is cut or cook. The Russian Kale is a bit easier 4 me to swallow so I just use spinach. sniff. But I will use kale in my smoothies. Great salad .

Ann is correct regarding eating the kale spine, stems or stalks. Whatever they are called. You can chop it up and cook it first. They cook nice and tender. We always cook with onions and garlic then add the leaves and steam them. The spines have as much nutrition as the leaves and more fiber. So don’t just always throw them away!

How do you keep the worms off the kale while growing it?

Grow it when the weather is cool. Weather too warm stressed the plants, which is what makes them attractive to insects. In North Texas I plant my kale in about September so the weather is warm enough for it to grow quickly. While the weather is still warm I have to fight the caterpillars but as soon as cool weather hits the bugs leave it alone. I try hard to keep it growing through the winter so I don’t have to replant in Spring because our weather gets so hot so quickly that, by the time the leaves of new transplants are big enough to eat, the bugs get them.
