Trimming spare ribs into St. Louis style ribs is simple. But don’t forget you can take those trimmings and use them to make rib tips/riblets!
Spare ribs are usually cheaper per pound than having them precut to St. Louis style, but trimming them yourself will let you use that extra meat to feed bigger appetites!
Bonus tip in this video is how to remove the membrane from the back of the rack of ribs.
