White Negroni, or Negroni Bianco, is a variation of a classic aperitif cocktail with a long and interesting history. But can we make a white version of this drink with a foraged ingredient and mead instead of vermouth? I made it and I love it! I used a rapid infusion technique for spruce tips-infused Botanist gin and since May 20th is World Bee Day I had to use one ingredient with honey - mead, made with wormwood, by my friend Beekeeper David. I called this one the Beegroni. See the recipe below.

Beegroni
· 37,5 ml (1.25 oz) rapid-infused Botanist gin*
· 30 ml (1 oz) Italicus
· 22,5 ml (0.75 oz) Mead infused with wormwood
Stir the cocktail and serve it in a tumbler glass over a large ice cube. Express a lemon peel and garnish the cocktail with some edible flowers.
As always, enjoy it like a true lady or a gentleman - responsibly.
*Rapid-infused Botanist gin
· 50 g spruce tips
· 200 ml (6.75 oz) Botanist gin
· N2O cartridge
Pour gin in the siphon and add roughly chopped spruce tips. Charge the siphon with one N2O cartridge and wait 2 minutes and 30 seconds. Then release the gas, open the siphon and wait until you don’t hear any bubbling. Strain it through a coffee filter.
