I discovered your channel a couple months back by a general search. It's one of the best things that's happened. Thank you so much for videos and tips on how Chinese takeaways make their food. You guys are awesome 👌 I have followed your step buy step instruction and managed to successfully make sweet n sour chicken Hong Kong style and the egg fried rice to go with it and we where amazed that it tasted soo good. My children thought it was from our local Chinese. I'm going to try the crispy kung pao pork and takaway noodles this weekend. Love it thank you. I will be buying your book soon 10/10 👏 👏 👏

Yeah there's usually nuts in it when I get it here from a takeaway, sometimes cashews or peanuts or even chopped water chestnuts, I don't mind that little bit of crunch, but I get that's a westernised version of it.

I think Choo's got the right idea with regards to baths but the wrong way around. Ideally you should have a bath first and then shower afterwards to remove all the "bath scum"

Looks delicious. Definitely something to try in the future. Out of curiosity, does the freezing and defrosting not affect the texture of the batter? Or does the second fry adequately deal with any residual moisture?

Yeah makes it crispier because the cold air drys out the batter

@@ZiangsFoodWorkshop Thank you for the quick response. So if I were going to do this at home, I would do the initial fry, let it cool completely, pop it in a zip lock back, freeze, then later on fully defrost, refry for about 5 minutes, and jobs a goodun?

Yeah you can do it from frozen you get better results but you need to cook longer

I love so many of your recipes, and especially the techniques that you show, and it's relevance to the whole take-away. The only thing is that your stuff is really more UK and EU Chinese food relevant. Iknow you guys are so busy doing "your thing" in the UK, but I wish you would jaunt over to the NorthEast US and elsewhere and show so many of us from the US how the American Cantonese/Sichuan/Hunan places are doing stuff. So many places are about the ubiquitous "brown sauce", pan-fried soft noodles served as lo mein, and some bag of totally fried dry noodles served as chow mein, appetizers like crab rangoon, and so many kinds of egg rolls... You've shown us how the UK stuf iss, why not show US how stuff is being done take-away in America. I think a lot pf people would love to see you teach how. Thanks for everything so far, my family and friends love the results, and you've taken me way past my "Kung Fu Noodles" into a serious meal with possibilities!

I don't know if you have the equipment but would you do a special episode showing a clay rice pot? I saw it recently and it looks so, so amazing. Especially the last bit with the crust but I guess you might need coals? Cheers!

Can you cook kung po chicken or pork but use hosin sauce instead of sweet and sour.. my local Chinese uses hosin :)

I have chicken kung po from my takeaway, which is not bad but they put in cashew nuts which I really enjoy, but sometimes there are carrots, what is it about putting carrots in some chines dishes that I've eaten for years and now there is carrots, like in chow mien, in some sweet and sour's I've had, I dont get it. I'm not a great fan of cooked carrots, other than in a British stew or a cottage pie, other than that I like my carrots raw. That did look great, I'm hungry now 😆😆😆

Yeah its a common misconception, modern science even says it safer than salt, sugar and fat, the scientific community now on the whole belive the bad press on msg was an delibertae and openly expected form of xenophobia, as the results were so off they could only could of been fabricated

Peral river is better for traditonal food not takeaway, takeaways will use it but shouldnt, we have top 10% and 1% certificates in the world for our places on tripadvisor
