I get perfectly cooked eggs by doing it this way for my breakfast tacos or burritos. If the egg is overcooked it makes for a pretty miserable taco and it isn't as digestible.

I love when Jamie does recipes from the his past (updated or not). It's a nice reminder that there's already so many great recipes out there. Jamie's America is one of my favourite books (Sher ping, Astoria soup, mountain meatballs!) - so many family favourites!!

Watching different videos of Jamie's, I love that he has an eclectic set of dishes. Like home. I've had a matching set, but pretty much have two of this, another of that. Trying to match everything and make it pretty isn't always life. His looks like stuff he actually uses.

I've been making this breakfast every weekend, both days, for over a year. It's simply fantastic. I do a couple substitutions. I don't like raw tomatoes so I lightly sauté the cherry tomatoes before adding the eggs to the pan. I use bread when I don't have tortillas (which is usually) and I add sliced chillies with the spring onions to the eggs. The key to this dish is the hot sauce though. I once ran out and tried it without it, complete trash, don't do it. Best breakfast ever! 🌶🍳🙌

That is a very traditional mexican breakfast..it is so delicious...you can add or put different ingredients and it'll taste just as amazing.....we eat it a lot here in Mexico....nice to see that people from around the world try our food!!! I love your channel ☺❤👍👍👍👍👍

This is great stuff. I've been doing something similar to this, except tomatillo salsa instead of tomatoes, and guacamole instead of sliced avocado. Hadn't thought of trying manchego. I'm going to try this soon, variety is the spice of life. Thanks.

Breakfast tortillas are a great on the run meal. When my children were growing up I also put sausage in and folded like a burrito. Healthy and delicious. Thanks for sharing this yummy version. We are gathering ingredients now.

Wow, so That's actually kind of Mexican. Seems like a quick and easy choice for a surprise guest or something. Down here in Mexico we try to be resourceful and use whatever is at our reach, caring not to waste.

I love the laid-back way of cooking, almost doing netflix and chill with the ingredients. I'm a chef myself, unfortunately the industry doesn't allow this way of cooking. maybe i'll make my own business someday where i can enjoy myself as a chef as much as jamie does on a daily basis..

The eggs look beautiful, perhaps the best looking scambled eggs ever. I would never have thought to do it that way but gotta try it. Seems like cooking the tomatoes would be good, but if you are looking for the texture, I guess thats pretty solid and they do look like decent tomatoes. Nice, gotta check out that hot sauce.
