You're all WELCOME! 8 Shortribs 1 Large Onion, finely chopped 3 Large Carrots, peeled and diced 3 Stalks of Celery, diced 8 Cloves of Garlic, smashed and peleed 2 1/2 cups of Red Wine 4 Tbsp of Tomato Paste 2 ½ cups of Beef Broth 2 Sprigs of Rosemary About ½ cup of All Purpose Flour ¼ cup of Vegetable Oil Salt and Pepper, to taste Preparation 1) Preheat your oven to 375 degrees. 2) In a dutch oven, add your vegetable oil and preheat it over medium high heat. Season both sides of the short ribs with some salt and pepper, dredge each short rib in the flour and shake off the excess. Place them in the hot pot and cook them for a few minutes on each side until golden brown and crispy (do them in batches so you don’t overcrowd the pot). 3) In the same pot, add the carrots, onions, celery and garlic, season with a little salt and pepper and saute until the veggies cook down. 4) Add the tomato paste and cook, stirring it in the veggies for about a minute, deglaze the pot with the red wine and allow it to cook and reduce for about 1 minute. 5) Add the rosemary and beef stock and put the short ribs back in submerging them in the stock. Cover the pot with a lid and pop it in the oven for about 3 hours making sure to check on it periodically to make sure your liquid isn't reducing too much. 6) Take the short ribs out of the pot, skim off as much of the fat as possible, season with salt and pepper to taste and serve over polenta.

there are so many people on KZfaq doing cooking videos but I must say you have become my absolute favorite. You do not waste time talking about irrelevant things but rather stick to the recipe. For this I am grateful. I made your chicken piccata last week and WOW it was so good thank you

Alex LF You probably know this by now, but she has a show that airs on the Cooking Channel called Simply Laura. They show a lot of reruns now, but you can also find them, or schedule to record them on OnDemand.

That's why I like you video...your showing that everything isn't always so perfect. Somtimes there are accidents.That tomato paste in the tube has a mind of its on when it splattered in the pot and on you and the look that was on your face (priceless). Great video

An old Italian trick for removing grease from a pot of sauce, is to place a couple of slices of bread on top of the sauce. The bread soaks up all the grease, while leaving the great tasting sauce. I use this trick when making short ribs ect. Just remove the slices of bread after it soaks up the grease. No fridge, or time wasted, and much easier than skimming with a lattle. Hope this helps.

Joan D with the pot you can just put some morning fresh soak in water for 5 mins then add jif soak for another 10 mins and then wash and rinse

Old Italian short cut for removing grease/fat. Let cool 10 mins and lay slices of bread on top of anywhere you want to remove the grease/fat . The bread soaks up the grease/fat like a magnet. Dont let it sit long on sauce, or the good stuff will also get absorbed also. Works great everytime. Saves alot of time. Just throw bread away with the grease/fat absorbed in it. My dad use to give to the digs, who loved the treat. Good for Dogs furr also. Easy cheesey

Looks awesome. I believe the technique that she used is more accurately called stewing, although the dish would certainly be referred to as “braised” or “slow-cooked” in any fine restaurant. By the time the meat is done cooking, the meripoix and herbs will be spent - another option would be to just strain the sauce through a fine sieve into a fat separator which would give a nice, silky smooth sauce without much additional effort. Either way, it should be delicious.

My grocery store didnt have short ribs sooo I got a roast and added a beef bone did exactly what you did and it came out alot like yours. I puréed 1/2 the gravy. Serving it with mashed potatoes. Can't wait to eat.

She says in the video a little after 5:00 mins that you can substitute with extra stock (beef would prob be best) in place of the wine. But that it will affect the overall flavor of the dish i.e. it won't taste exactly like her finished product. However that's not to say it wouldn't taste as good.

My braised short ribs are very simple. I use plain water, onions and potatoes. Served with rice. I also cook in a pot on top of the stove.

If you're short on time you can run an ice cube over the top and all the fat will stick to it :) Can't wait to make these!
