Ingredients:
Dough for 2 cupcakes:
1. butter-250 g;
2. sugar-250 g;
3. eggs - 2 PCs;
4. cottage cheese 9% - 250 g;
5. vanillin - 1 tbsp. l;
6. baking powder-10 g;
7. ginger - 1 tsp;
8. cinnamon - 1 tsp;
9. nutmeg - 1 tsp;
10. cardamom - 1 tsp;
11. flour - 600 g.
Filling:
1. dried cranberries-120;
2. dried cherries-100 g;
3. lemon-half;
4. almonds-100 g;
5. liqueur (whiskey, rum ) - 200 ml.
For sprinkling :
1. butter-100 g ( for two cupcakes);
2. powdered sugar.
How to cook:
1. soak dried fruits and lemon in liqueur (rum, whiskey) overnight;
2. beat soft butter with sugar until creamy;
3. add the eggs and continue to beat;
4. next, add cottage cheese, vanilla, cinnamon, ginger, nutmeg, cardamom and whisk until smooth;
5. in another bowl, sift the flour with baking powder;
6. in small portions, add flour to the curd mass;
7. soaked dried fruits are washed and sprinkled with flour;
8. Wash the almonds, dry them and finely chop them;
9. add dried fruits and almonds to the dough and mix thoroughly;
10. on parchment, we form future stollens, you can use a baking dish, or you can do it without;
11. bake for 1 hour at 180 degrees;
12. check readiness with a wooden stick;
13. the cooled adit is smeared with melted butter and sprinkled liberally with powdered sugar ;
14. Stollen is ready to eat, but it is better to wrap it in film and leave it in the refrigerator for a few days ( this will be even tastier )
