This Gluten Free Oatmeal Bread is made with King Arthur’s new Gluten Free Bread Flour. The Flour is supposed to be a 1:1 swap for traditional flour in sourdough, sweet bread and rolls recipes. I have to say that this flour blend did an excellent job in making a good gluten free bread. The dough was easy to work with and it rose and baked up perfectly. The taste of the bread did not have a gluten free taste and had great texture.
The main ingredient in the blend is wheat starch which is supposed to be safe for celiacs and gluten free people unless you have a wheat allergy. Always use products that work best with your dietary needs.

Gluten Free Wheat Starch
Corn Starch
Cellulose and Psyllium Fiber Blend
Sorghum Flour
Pea Protein
Xanthan Gum

Dough:
1 1/2 Cups (340g) Water, Lukewarm (100°F)
2 Large Eggs
2 Tbs. (28g) Butter, Softened
3 Tbs. (40g) Light Brown Sugar or Dark Brown Sugar, Packed
2 tsp. Instant Yeast
1 tsp. Salt
3 Cups (360g) King Arthur Gluten-Free Bread Flour
1 Cup (89g) Old-Fashioned Rolled Oats
Topping:
1 Large Egg, Beaten With 1 Tablespoon Water (Egg Wash)
2 To 3 Tbs. (11g to 17g) Old-Fashioned Rolled Oats

Do you think this recipe woukd work with King Arthur gf measure to measure flour since I have a wheat allergy?

One of the other ingredients in the gf flour is the Cellulose and Psyllium Fiber Blend. I feel that those two binders in the blend help a lot with the end result of the bread. With the KA GF measure for measure ingredients being so different from the GF Bread Flour blend, in my opinion I don't think the recipe would do well with that swap. This recipe I found uses individual flours and is getting good reviews. I don’t have celiac, so I could probably get by using that brand of gf flour. It does look like it makes great toast. I may have to give this a try. **Evidently the North Carolina Wegmans stock different items. I checked the Wegmans near me (in central Virginia) and they don’t carry the Qwackers you mentioned in a previous video. There’s always Amazon!

Hi Brenda! Are you getting rain this week as well? we are here in NC. We had breakfast for dinner today and thawed a couple pieces of the oatmeal bread for toast. Taste is really good but it did get crumbly. I hoping to make some more breads with it soon to see how it does. I've also been studying up more on some like pysllium husk powder so I maybe work on converting and developing more recipes of my own using separate types of gf flours. Sorry about the Qwakers at your wegmans.

My daughter has severe celiac disease. WHEAT STARCH IS NOT SAFE for her.

I have celiac disease and can state that certified GF wheat starch is ok for people with celiacs disease. Some people also have a wheat allergy and cannot have eat any part of wheat. Celiac disease is an autoimmune reaction to ONLY the gluten in wheat, rye, and barley flour.

Ya I stopped watching the video there because I have Celiac and was like "WHAT?". There is no such thing as wheat being gluten free.
