It's also wrong, liquids don't suddenly evaporate when they reach their boiling points

@@jomartyn8789 That's true, but I think the point is that alcohol evaporates at lower temperature than water, so as soon as you see that smoke coming out you know that's 100% alcohol evaporating at 80°C, before it reaches 100°C and water too starts to evaporate. The alcohol won't all evaporate immediately, but it will eventually before all the water does. And since wine is only about 12% alcohol, losing only 3% of the whole mass due to evaporation could cut down the alcoholic level 25%. I want to get drunk, not fat.

@@MilosColakovic That's not how solutions work, a mixture of alcohol and water won't have two distinct boiling points, it has one boiling point between the two boiling points.

I wonder if you could top up the wine with uncooked wine so it still has alcohol if you accidently boil. Then you could let the spices simmer more. Oh! What if you had some spiced apple cider then just added the wine at the end? Are there some downsides to doing that?

Sooo I actually made this wine today. I used apothic red wine. And I didn't use any ginger root. I live in the US and got most the ingredients from Amazon. I made two batches. I suggest you watch how much star anise you put in it because my frist batch came out tasting like straight black licorice. The second batch i added about 2/3 a cup of sugar and an extra orange. The second batch had a wonderful after taste. I 10/10 recommend this mulled wine recipe.
