Nope! That’s my fishing boat captain, he learned how to fillet salmon to bring home so they have good fish for the winter. Philly works in a Seafood processing plant, their operation is a bit different

LA Seafood Processors Processes seafood product by performing the following duties: Essential Functions: Cleans, scraps, trims and fillets product.Opens and removes raw materials and places on belts.Segregates product on conveyor belt or table according to grade, color, and size, and places product in containers or on designated conveyors.Discards cull (inferior or defective) items and foreign matter.Packs product in boxes, barrels, baskets, cans, totes or crates for storage or shipment.Operates machine(s) to move live or packed seafood from place to place.Reviews workspace for cleanliness and safety.

The filleting looks easy if you know what you are doing. What do you mean about the "knot"?

Mrs. Thomas HBW to be honest I don’t know what part you mean. But you might mean the collar? This method of filleting keeps the collar bone on so that you keep a few extra fatty morsels that often get cut off
