Meat Jun is a popular Korean dish eaten in Hawaii. I remember eating Meat Jun from Yummy’s Korean BBQ. It has a sweet and savory taste that always takes me back home. Thinly sliced beef is the most common type of meat used for Meat Jun, but for this recipe, you’ll also learn how to make Meat Jun with chicken and fish. #meatjun #platelunch #koreanfood
Ingredients 1 lb. rib eye beef, chicken breast, fish (white type)
8 eggs
flour as needed
Marinade:
3/4 cup shoyu (soy sauce)
2 cloves minced garlic
3/4 cup sugar
1/2 cup water
Dipping sauce:
1/3 cup shoyu (soy sauce)
1 tbsp rice wine vinegar
1 tsp sesame oil
2 pinches of red pepper flakes (optional)
1 tsp gochujang/chili oil (optional)

Midwest boy from Chicago here. My first fish Jun was at the ala Moana food court. That food court , 30 years ago changed my culinary life. I had leftover rice, two soft eggs with a dash of shichimi, furikake and a couple tablespoons of kimchi. Food always brings me back to my days on Oahu.

When I lived in Hawaii years ago I loved the fish jun from Peppa's on Wilder Ave. I went back a few years ago just to eat the places I missed like Zippy's and Karen's Kitchen.

Shoyu=soy sauce. Brand wise, I like aloha shoyu because it's not as strong as other brands.

I only have seasoned rice vinegar. Is that OK? Looks good. I think this would be good with pork, too.

When you batter the meat, an old cook’s trick is to keep one hand wet, and one hand dry, thus preventing your hands from getting mucked up with sticky flour and eggs. For example, pick up the eat with your wet hand, drop it into the flour without touching the flour, then with your dry hand cover the meat with flour without touching the meat until it’s covered in flour. With your dry hand drop the flour covered meat into the egg mixture without touching the egg and with the wet hand handle the meat after the flour has been moistened by the egg. That way , if you need to answer the phone or something, wash your wet hand and it will be free of any flour so very easy to clean!

I do that, too. But it still gets messy. I saw one KZfaqr use tongs. I'm going to try that next time.

I went to both the schools right across from soons back in the early 90s. If had a field trip that day soons was what I brought. Every time! Still go there till this day

Soon's! On salt lake boulevard. I used to go there as a kid (im in my 40s now) and I go back to visit every year, it's still there in the same exact place and I still always order meat jun.
