Chashu - Melt in your mouth pork belly braised in sweet and savory soy sauce based sauce. Sear with torch to enhance flavor and enjoy with ramen!

¾ lb. pork belly block
1 tsp. salt
½ Tbsp. oil
2 inch ginger, sliced
1 Tokyo negi (or leaks/green onions)
Seasonings
⅔ cup water
⅓ cup sake
⅓ cup soy sauce
3 Tbsp. sugar

I fell in love after trying this recipe and was lucky to get pork bellies (they're not that common where I shop). What I like is the sauce, since any leftovers can be mixed made into a soup stock for that Char Siu flavor.

You can go to Costco and ask Butcher to give you a thick pork belly.

I’ve had a hard time obtaining pork belly, too, but I used the same technique on a small pork roast and it was delicious, and maybe a bit healthier since there was less fat. I finally have a pork belly, though, and I’m going to make this right this time!

Making my first attempt at Chashu Pork tonight. Followed steps nearly the same as this and it's slowly braising at this moment. This video makes it look SOOOOO GOOD!!! Can't wait to have some with Shoyu ramen soon. Love this video!!

Nami I tried this tonight and it was just as good as I hoped it would be. Really delicious! I have made Chashu before using a more complicated and time consuming recipe...this recipe is just as good and so much easier!

Making this right now. It's in a pot on low heat with a hole foil cover. The house smells delicious. Going to make fried rice with some of the char sui once it's done.

I've tried this recipe and it's really simple but delicious! I didn't have sake, so I substitute it with mixture of wine and mirin. Still great taste though... thanks for the recipe 👍🏻

Dropping by to say, 'thank you' for this wonderful recipe. I made this for dinner and it was bomb!😄 I will surely make it again in the future. I didnt use sake though coz we dont have that here. Nonetheless, the result exceeded my expectation. The meat was so tender and I like the fact that its got the taste of ginger. :) Note: It was my first time to try/eat it as Ive never been to Japan and Japanese restaurants in our area dont have it in their menu. Thank you again.^-^

+Namiko Chen (Just One Cookbook) Also, could you explain how to do the additional step which is searing with a propane torch or broiler. How long do you use the torch or broiler? I know searing is quick, so its probably not that long and I should just watch it I'm guessing. And, if you do the torch how are you supposed to direct the flame like how close should it be to the meat and going in what direction. I'm guessing you don't want to do it vertically aiming directly on the meat. Going horizontal above the meat is probably better?
