Lo Mai Gai 糯米雞 Steamed Glutinous Rice with Chicken
This week we will be introducing Lo Mai Gai (糯米雞), or Steamed Glutinous Rice with Chicken. This is a really famous Dim Sum dish that can be found in many Chinese restaurants around the world. Fragrant sticky rice with well marinated chicken chunks make for a great meal or even as a snack!
For this recipe, you will need the following ingredients:
300g Glutinous rice
2 chicken legs
10 Dried mushrooms
1 Chinese sausage
4 shallots
4-5 slices of Ginger
Chicken seasoning:
1 tbsp oyster sauce
0.5 tsp sesame oil
1 tsp sugar
0.5 tsp dark soy sauce
Dash of white pepper powder
1 tsp corn starch
Glutinous rice seasoning:
1 tbsp light soy sauce
1 tbsp oyster sauce
0.5 tsp sesame oil
0.5 tsp dark soy sauce
0.5 tsp Chicken stock powder
1 tsp sugar
Steps:
1. Soak glutinous rice for 3 hrs and dried mushrooms for 1hr.
2. Fry the Chinese sausage and dried mushrooms until fragrant
3. Add half of the shallots and fry until golden brown.
4. Add soaked glutinous rice and season with above listed ingredients
5. Mix well and add 200ml water.
6. Stir fry until water is absorbed and stick consistency is reach but rice not cooked yet.
7. Set prepared rice aside for later use.
8. Heat up oil again and fry remaining shallots and ginger until fragrant.
9. Add chicken pieces and 100ml water.
10. Simmer for 5 minutes.
11. Remove the chicken and sauce.
12. Assemble in a metal mould: Chinese sausage, dried mushroom and chicken.
13. Top up with rice and compact the rice with a spoon.
14. Steam the assembled Lo Mai Gai at high heat for 40 minutes.
15. Remove from steamer and it's ready to be served.
