KEEP IT!!! That's a perfect spot for it and it's well worth it. You don't need a recipe, because you already know how to cook, just throw it in the pot and you're good to go. I loathe cilantro. You can usually cook up to 10 hrs on low w/out worries of overcooking. Isn't a great coming home to a cooked meal. I hope you get to live this way for as long as your heart desires. I just wonder if you get lonely. My hope is you will meet someone who likes to live like you and then you move into a bigger vehicle and adventure together.

Some ginger thoughts, seeing you're likely far from a grocery store most of the time: 1: Try the (side) edge of a spoon for skinning the ginger! Hardly any is wasted. 2: Ginger doesn't care at all about being frozen, just shave/cut off what you need and put it back in the freezer (or your wheel-well). You can keep it frozen in a plastic bag and it'll stay fresh for many months. Once it's frozen, just keep it frozen. It'll get mushy otherwise.

ETA - You're not a "KZfaq content creator." You are EASILY one of the BEST KZfaq content creators out there! And unlike a lot of channels with a limited demo, you have BROAD appeal, thanks to your easy-going, incredibly likable, straightforward approach. Personally, I can confidently say I will never fatbike, I will never snowshoe, I will NEVER climb an effing mountain, and I will never live alone in a van. But I WATCH these videos RELIGIOUSLY - and that's pretty amazing when you think about it. In fact, it's the ONLY channel I watch on a regular basis and check regularly for new content.

I only started watching a little while ago and I love every minute I spend watching! I love your genuinely honest nature and laid back style. I also can't believe that you fit all that you have in that tiny van! Amazing! Please don't give away the slow-cooker, it's such a wonderful tool for easy and nutritious food and will bring joy for years to come!

I know everyone's been nagging at you for longer videos but I'm pleasantly surprised to see you break the 15 min mark. Keep it up, sending you love all the way from Oman.

Sitting in Florida, complaining when the temp drops into the 50°s, and considering making Thai for dinner. This was perfect motivation! Please keep up the wonderful episodes!

I don’t think you need to worry about bear spray while hiking. They will all be back trying to get to that slow cooker. As Yogi says, your van is like a big pic a nic basket.

You should connect with mountain climber partners before your “hike”. Jeez, guy! Sooo nerve-wracking in avalanche country. Beautiful shots as always and yummm! Glad you’re not getting rid of the crock pot (maybe)
