Nyonya Acar Fish (Acar Hoo) 娘惹式阿渣鱼 | Nyonya Dishes | Cook with Pam ASIA TO OZ
800gmullet( ikan Belanak), scaled and cleaned
2 tbsp turmeric powder
1 tbsp salt
2 cups cooking oil
**Mix and evenly, marinate for half an hour, then fry over medium heat until golden brown and crispy,drain up and set aside.
Tumeric Vinegar Base
2-3 pieces tumeric root, peeled and fine sliced
100g ginger, finely shredded
8 cloves garlic, finely sliced
5 red chillies , cut into pieces
6 small green chillies ,cut into half
1/3 cup white rice vinegar
8 tbsp brown sugar
1 tbsp Asam Jawa paste (squeeze juice, set aside)
1 cup water

My mother in law dont use assam juice. Each family has their own style so long it is tasty.

I don't recall my late mom putting asam jawa juice for this dish.

My late mom used to cook this super delicious Achar Fish but she shredded all the ingredients. But didn't rub the fish with turmeric powder but just salt only. We use purely vinegar, no Assam juice. Super delicious if we eat it 1 or 2 days later. This dish was in our family more than 60 years.
