Do you love the sweetness of roasted bell peppers? If you do, then you should be making them right in your own kitchen! The technique is simple: Just cook your peppers directly over a burner on your stove until they're bubbling and black, let them steam, and then wipe their skin away. Use them as a tasty topping on pizzas, pastas, or just enjoy them on their own!
Sarah's Tip of the Day:
Turn off that tap! Running your peppers under water will dilute the incredible flavor you created during the cooking process. Instead, wipe the blackened skin away with your hands and a paper towel.

YIELD: Makes 1 pint
INGREDIENTS
4 bell peppers 3 tablespoons olive oil, plus more for drizzling 2 tablespoons red-wine vinegar Salt and pepper 1 sprig oregano
COOK'S NOTE
Roasted peppers can be refrigerated, up to 1 week.
DIRECTIONS
STEP 1
Roast bell peppers until charred. Place in a bowl and cover with plastic, 10 minutes. Discard skin, seeds, and stems; thinly slice peppers. Toss with oil and vinegar; season with salt and pepper. Transfer mixture to a clean glass jar, add oregano, and top with additional oil to cover; secure lid.

I would def recommend whole cloves of garlic with my peppers then put in the oven on broil, I like using butter instead to give it more flavor

What an absolutely WONDERFUL idea! I buy roasted peppers from time to time, but after seeing this, I'm buying some storage jars and will most definitely give this a try. My only question is, can this be done without the salt? Thanks, Sarah. You're fantastic. I would be interested to see YOUR take on home made pickles. Will anyone second my suggestion?

Can I leave out the Vinegar & just use the Oil to keep them in the Frdge.?Will they stay without adding in any vinegar etc.

We used to just add a clove of garlic and olive oil. Sometimes just extra virgin olive oil and it was fine in the fridge just fine. The vinegar and the herbs are for flavor. The oil becomes flavored and is great on roasted chicken or roasted vegetables. You could probably add some spices and make a dipping oil.

Great taste! Love how I can use the oil to pack some extra flavour in my cooking. If I'd put this oil in a new container (like a regular olive oil container), how long will this oil be usable? Should it remain in the fride or can it be stored outside the fridge aswell?

I probably wouldn’t reuse the oil on another batch of pepper because bacteria will grow in oil. However I would use some on my next roasted chicken or roasted vegetables while it’s still good. You could add some spices and make a dipping oil. We don’t use vinegar in ours and we do use a clove of garlic, but it should still work. The oils take a lot of flavor from what is soaking in it.

No it will loose the flavor of the peppers, If yo water them down etc.

Dried oregano should be fine. Just use less. Oil will rehydrate them.

isn't there harmful chemicals in the gas stove? is it safe to put it directly on the fire?

My Grand Parents have been doing their Peppers on top of the gas stove, Fo all that I can remember & it does not cause any sickness or poison to your health etc.

Thanks for the recipe and about top get charring, but delete that link to it- it's been hacked and twice tried to infect my computer. Thank goodness for virus protection, wish we humans had it too.

you are removing the burned parts (the carcinogenic part)... so there is no detriment to your health... there is no difference in stove vs broiler... using your logic, we should not be using gas grills either then.

No no no no no no no..., wow you don’t roast a pepper that way, you always always always use an oven, you just burnt t crisp a pepper to quickly get very little burnt flavor, your suppose to put in the oven in cut sections deseeded

Actually the old timer either did it on the flame of a gas stove or on hot coals. If you put them in a paper bag it a covered bowl ti they cool enough the skins rub right of and you can tear the pepper open and wipe off any seeds that didn’t com off the stem. If you’re going to cook them over fire or coals they should be garden peppers or you need to scrub with salt or baking soda to get the wax off. Dry well before roasting.
