In this video tutorial, I show you how you can make healthy bread, even if you are a fan of a very fluffy crumb!
It's no secret that premium wheat flour is less useful than whole grain, but sometimes you want a light and porous texture!
We're going to add wheat bran today for benefit for health. You can replace them with rye flour or some whole flour.
So, we need:
200 gr. wheat sourdough 100% moisture
300 gr. water at room temperature
450-480 gr. wheat flour of the highest grade
20-50 gr. wheat bran
25 gr. sugar
12 gr. salt
jelly for lubrication (to create a glossy crust): 0.5 tsp. boil starch in 30 ml of water
vegetable oil for lubricating the mold
You will also need 6-7 ice cubes to create steam in the oven, the oven itself, preheated to 240-250 degrees. And of course you need a desire + a certain amount of free time.
What will we get as a result? Lush, soft, airy, fragrant bread with a crispy crust. It will be not only tasty, but also healthy due to the addition of bran. Bran is the particles of the shell of the wheat grain, which are removed in the production of premium flour. By returning them to bread, we return the benefits of microelements and vitamins to it. Well, and most importantly, wheat grain fiber, so necessary for the proper and healthy functioning of the digestive system. Such bread will also be beneficial for the figure, because bran slows down the absorption of carbohydrates from food, while speeding up satiety. Enjoy your meal!
